This reminds me of my version of eggplant mussaka but with a french touch :) I dont add fennel or mushroom , we usually make it in egypt with minsed beef .

Using an electric grill or BBQ is just a shame indeed! If I want just plain grilled stuff without charcoal, I can just chuck it into a pan. So glad you also think of it this way:)
