Egg Custard in Pumpkin by Asia Scenic Thai Cooking School is the authentic Thai dessert and not difficult for you to do in your kitchen.
*you can steam the custard in bowl or tray instead of pumpkin.
Ingredients :
2 hen eggs
1 duck egg
2 tbsp - palm sugar
2 pinch - salt
1/3 cup - coconut milk
1 pandanus leaf (optional)
*You can steam the custard in bowl or tray instead of pumpkin.
** Steam on low heat.
*** Leave it until completely cold before cutting

Why the custard become very watery ? Is it the pumpkin too big ? Steam 1 hour too long ?

For the pumpkin, did you use the Thai Kang Kob or the Thai Rai kaw tok pumpkin?
