Pumpkin Risotto, one of my absolute favorites, so much so that it never fails to make it to our table periodically, perfectly paired with a delicious Lambrusco Grasparossa! Mmmhh, what a treat!
Of course, this is my personalized version, super creamy and with that perfect "wave" texture, which I consider absolute perfection!! Haha, my mouth is already watering...

Ingredients:
120 g rice
About 200 g Mantuan pumpkin
1.5 L broth
1 shallot
60 g butter
Extra virgin olive oil, to taste
80 g Grana Padano or Parmigiano Reggiano
Preparation:
Prepare a small pot with the broth, clean and dice the pumpkin, finely chop the shallot, and set aside the other ingredients.
Start by cooking the pumpkin. In a small pot (I’ll use the same one to cook the rice), add half the butter and a drizzle of oil. Once the butter has melted, add the shallot, letting it brown slightly before adding the pumpkin. Sauté the pumpkin, add a ladle of broth, and a pinch of salt to the pumpkin. Cook for 15 minutes on medium-low heat.
Once the pumpkin is cooked, transfer more than half of it to a container for an immersion blender, leaving the rest in the pot.
Now let's prepare the risotto. Add the rice to the pot, toast it for a minute with the pumpkin, deglaze with a little white wine, and then gradually add the broth, cooking over low heat.
While the rice is cooking, prepare the pumpkin cream. In the immersion blender container, along with the pumpkin, add olive oil and half the amount of Grana/Parmigiano indicated in the ingredients. Blend everything, adding more oil to make it smooth and glossy or a little broth if you’re having trouble blending. Be careful-the cream should not be “liquid” but rather thick, as it will be used to make the risotto creamy.
After the usual 15/18 minutes of rice cooking time, it’s time to make it creamy! Remove the rice from the heat and let it rest for a minute, then add the remaining butter, the remaining Grana/Parmigiano, and the pumpkin cream (a little at a time), mixing everything together to create the perfect "wave"!
