I've had a pumpkin soup on this channel before, which some of you guys absolutely loved. That was had some intense flavours, not ideal for my little girl. I decided to combine some of her favourtie things - bacon and maple syrup. Packed with full of flavour - smokeness from the bacon, sweetness from the pumkin and carrot roasted in maple syrup.
The key for maximum flavour is colour on the roasting. Colour on the onion and garlic. As Gordon Ramsey says. Colour equals flavour.
Retain the liquid you cooked the bacon hock in for the stock for the soup. Win Win.
Ingredients:
6 Cups water
One or two bacon hocks
2 Bay leaves
1 TBs pepper corns
3/4 whole pumpkin
3 large carrots
2 Tbs oil
2 Tbs maple syrup
1 Tbs thyme
1 tsp salt
1 tsp pepper
One large onion
4 cloves of garlic
