living in australia I've never really done ham hocks, but I found smoked ones at my deli recently. The fact that I can just make the same as a chicken soup, but with ham hock is reassuring. Your van is so gorgeous. My dad just bought a Kombi and I'm determined to borrow it for camping!

Ahhh soup season ! I used to really look forward to making soups. I’ll have to find a low carb one but the potato makes lovely thick soup. I like mine blitzed and thick, but in a Campervan I use a masher to blitz it and it’s definelty more rustic and actually I think a bit tastier. You are so right about it being more tasty the day after you cook it :).
