I love making cream puffs because they’re pretty quick to whip up and it looks like you put a lot of effort into it. But I feel like it’s WAY easier to make compared to cookies or bread.
Ube is a purple yam from the Philippines. I typically make chocolate or vanilla cream puffs, but it’s fun to put ube everything, why not.
The purple color is SO vibrant from the real ube purple yam itself, but for the extract it’s pre-colored.
I do have an ube extract that’s colorless, so if you want me to try that with a dash of purple powder let me knowwww

It's called cheux pastry, you can make profiteroles, chocolate eclairs, large cream cakes, often called elephants' feet here & you can also make them savoury. Some mayo, tuna, cucumber cut small with peppers, celery salt & pepper or chicken in a coronation or curry sauce, ham in a cheese sauce...you can make a lot of things with it, it's very versatile. I'm surprised you weren't taught it at school, we had to learn to make all of the different types. No packet mix of thawing ready made puff pastry for us, we had to make the dough, laminate the layers with butter, fold & fold &... My cooking teacher would send a kid with a note to ask whichever teacher's class I was in if she could have me because she's taken on top many orders, particularly Christmas cakes or if there was an event that had to have fresh cakes & biscuits. Often it was maths I was got out of, my partner teaches advanced maths, he thinks it's appalling lol. He also thinks that girls in physics were told to bring a book or magazines and sit quietly at the back while he taught boys! He was also extremely inappropriate with girls.

Almost forget cheesecake filling is nice too as is fresh whipped cream & some jam or coulis gently missed through, cream with lemon curd too, that's very easy to make and extremely hard to get in the US, my ex mom in law for to like it & a couple of 1lb glass hard of it costs a small fortune to post, so I taught her how to make it
