Every region has its cuisine based on weather, ingredients available, and needs of the body. There is nothing special or unique about it. Forget humans, even animals have different habits in different environments. Herbivore deers hunt/scavenge and eat birds, small animals when they don't get enough minerals and protein in their environment. Our food is unique because of our diverse climate. But we try to bind it by calling it "spicy." In reality, there is no "Indian" cuisine as such. We have 100s of different cuisines in India that vary from mildly spicy to very spicy. All fitting in their environment.

@mayankdewli1010 Ayurveda doesn't mention every single cuisine of India. A lot of South Indian food is not in there. I don't think Tikka masalas are Ayurveda certified either. Hundreds of eastern Indian dishes are not mentioned. So... they are not good AND not "Indian"? In fact, there are no direct recipes available in Ayurveda, I cross verified that with actual Ayurvedic doctor. All so-called Ayurvedic recipes are basically derived recipes based on concepts mentioned in Ayurveda.
