A good grind of sea salt, a grind of black pepper, heat some light olive oil in a good cast iron grill pan and sear each side for one minute, repeat, turn the hob down and for a 16oz steak cook for about 5 minutes each side until a crust has formed, remove from the heat, place on a warmed plate cover with foil (shiny side down), rest for 10 minutes, slice and eat. As a former manager of a steakhouse, this is a crime against humanity. Escoffier is rolling over in his grave. Part of the science behind developing flavor while cooking a steak is the searing process which enables the Maillard reaction. During this time, amino acids and reducing sugars create melanoidins. These compounds create the fond, giving food it's distinctive flavor. I agree with some of the posters who are from the "cook it however you want to" school of thought. But from a professional viewpoint, it's best to sear both sides in a hot pan with some fresh herbs, baste in butter and let it rest before serving.

Watching from Canberra. Looks delicious. I do a similar thing, but 3 hours in the oven at 120 degrees C. Best way to eat juicy red meat without drying it out. Ignore the haters. Some people know too much to be able to learn.

I almost called the police when I saw that beautiful steak go in the water.

About 15 seconds in, I double-checked to see if this was a new ironic vid by The Onion. Poor thing would kill itself again if it had hands.

Apparantly, based on the replies from current & former chefs...this here is one big MIS-STEAK

More of a roast than a steak. No sear and overcooked.

There's no maillard reaction on that steak. No crust. No flavor. 2 thumbs down

Agreed. Nice meat dish, but not a steak as we understand it.
