Steamed Cassava Cake or Puto Balanghoy (Lanson) is popular in the Visayas region of the Philippines. It is one of the most favorite Filipino mid-afternoon snack, which is cooked with grated coconut and brown sugar. What makes it even more delicious is the caramelized coconut “bukayo” that can be stuffed inside or used as toppings. Try cooking it at home and you will be surprised as they are nutritious and easy to make. Best serve while it is warm.
INGREDIENTS
***Bukayo***
1 young fresh coconut, grated
2 cups dark brown sugar
2 cups water
1 tsp salt
***Puto Balanghoy***
6 cups cassava, peeled and shredded
3 cups sweetened coconut flakes
1 ½ cups light brown sugar
1 tbsp salt
