Puto Bigas [ AUTHENTIC ] Fermented Steamed Rice Cake
Authentic PUTO are Filipino steamed rice cakes, traditionally made from slightly fermented rice dough (galapong). It is eaten as is or as an accompaniment to a number of savoury dishes (most notably, dinuguan)
Nowadays, we have so many options in the market. Some people tend to buy easy or instant mixture such as flour (all purpose flour or cake flour) depends to their taste, availability etc.
but really nothing beats with the PUTO BIGAS. It has a huge up level o authentic taste of our lola's made PUTO :)
..and my recipe is giving you another chance to taste one :)

yields :8 pieces of normal size puto
Ingredients
1 cup short grain regular rice (not glutinous)
1 1/4 cup water
soak for 6 hours
grind with wet stone grinder for 30 to 45 minutes
if you dont have this grinder, use a normal blender with grinder attachment.
grind a small amount 1 minute pero salang , OFF and rest the machine for 2 minuets. again ON and grind for another 1 minute. Repeat this until the batter is smooth
cover the batter, let it ferment overnight or until double in size and this approx happens between 16 to 20 hours
additional ingredients
3/4 cup sugar
pinch of salt
2 teaspoon baking powder
1/2 cup coconut milk
(next time i will try only to put 1/3 cup as the batter is less thick)
transfer to normal size puto 2/3 full
boil the water first over high heat
steam for 15 minutes
