Putong Bigas, Steamed Rice Cake

Recipe, yield 6-8 servings
300 g jasmine rice
(Soaked in water for at least 6 hours or overnight)
150 g sugar, granulated
1/2 tsp salt
4 tsp vegetable oil
3/4 cup water, from the soaked rice
4 tsp baking powder
as needed banana leaf (optional)
NOTES:
*You may have to add less or more water. The consistency should be like a pancake batter.
*Do not forget to strain when pouring onto the pan, which was not recorded on the video
*Steam for 1 hour to 1 hour and 30 minutes
***After steaming, Let it rest for about 30 minutes before cutting
You may serve it with fresh shredded coconut, cheddar cheese, sliced salted egg or whatever you can imagine that is good with it. Have Fun!

Naalala ko nagdadala ang kaupisina ko ng Putong bigas na gawa ng nanay nya at masarap cia.. Hindi cia fluffy parang bibingkng bigas ang texture nya un hindi dumidikit sa ngipin at mabango kahit kahit walang butter dahil sa gata pair with fresh kayod na Nyog.

nagluto na ako ng bigas na puto di ganito,matry nga.Gusto ko itong kainin kapag medyo malamig na.

tama ka bem, you have to air dry it. mas masarap pag lumamig na sya; makunat at airy na. pag bagong luto pa lang, medyo malata. it has to air dry for at least 15 minutes. please share photos when you finally make your version of it. :)

Wow ang galing! Yung ginawa ko po hndi umalsa.. Ganito po ginawa ko: Binlender ko ung bigas alone. No water. 2cups Nung pino na sya tsaka ko po nilagay ang baking powder 2 tbsp, 2cups water since wala akong gata powder milk ginamit ko po birch tree, 1/2cup washed sugar, pinch of salt and ung bnlender kong malungay. Blender ko silang lahat then rest ko 3hrs.. Inisteam ko 15mins pgcheck ko hbd umalsa at nagtubig ibabaw, but then masarap naman. Kaso matigas ilalim hnd umalsa. May natira akong batter. Try ulit rest ko ulit for another 2hrs and add ako 1tbsp bkng powder. Umalsa konti, naluto pero matigas at hnd maumbok. :(

eto nalang yung gawin nyo. the consistency is like the consistency of a pancake batter. not to thin, not to thick. and make sure na haluin nyo with a whisk to incorporate air, i strain nyo din. pag hindi pa rin umalsa, gawin nyo, dagdagan pa ito ng konti pang baking powder.

I wonder if baking powder is enough to make it rise??? I found a lot of comments from people who said their puto turned into kutchinta and I think that it was because they were relying on the baking powder to react with the rice flour. However, I think it reacts differently to that of all purpose wheat flour. From what I saw of the videos making puto, the successful ones were using regular wheat flour and using baking powder. While I saw another that used rice flour with yeast(levadora) to give it that rise. I wonder if by using a combination of both rice and ap wheat flour and using just baking powder would make it airy enough so as not to bother with adding yeast???

Hindi na po. Kung yeast, maghihintay kapa to ferment. Yung baking powder is a chemical leavener. Instant na.

You may try. I made this really basic to see what the other cooks may add to it. Melted butter would be nice, i think. You cannot go wrong with it :)

hi ruth, sorry for the late reply. i do not know why i do not get a notification on my account. anyways, make sure that your batter is the consistency of a pancake battery. add less water if necessary. Let is air day first before cutting. I hope this helps.

hindi ko lang alam kung pwede yung malagkit ng bigas. i think magiging parang kutsinta kapag malagkit ang ginamit but any whole grain or medium grain rice would work.

Yun kakang gata un po un unang piga s katas ng niyog alam ko po ksi isa din po sxa s nag papasarap kundi evaporada gatas pede din daw po un katas unang piga ng niyog.sana po ma try nyo syempre po mas masarap mag serve s family ng masarap kesa po s bitin ok lng sana kung pang negosyo pero kung s family ok lng cguro gagwa ng mas masarap.share nyo po skin if na try nyo po ksi bago pa lng din ako nag search mga desert at cakes

@@edgaralonsagay6104 mas ita try ko yung gata kaysa sa evaporated milk. one of my principles is to always start with something fresh and natural and let its natural flavor come out. :) meron akong pinag gamitan ng gata. icopy paste ko dito

pwede. pero hindi ko lang po alam ang ratio. i am sure madaming recipe sa google using rice flour. or you may use my recipe and adjust it with rice flour. the consistency is parang light na pancake batter. let me know how yours comes out when you finally make it.

hi jela! ang baking soda mo ay ginagamit kapag ang recipe po ay meron ng acid, such as lemon, vinegar or any other acid. ang baking powder po ang ginagamit kapag walang acid ang recipe. pwede po siguro kung half baking powder, half baking soda. kung baking soda lang po ay hindi aalsa kasi walang any kind of acid ang recipe. :) i hope this helps :)

Ano po ba ang difference ng pinapa “rest” daw muna ng 6 hours ang blended rice before steaming? (According to another recipe). Yours looks ok straight from blender to steamer. ?

i have no idea. i can think of is fermentation. but then soaking the rice in water would do it. resting it for 6 hours more after mixing all the ingredients is a waste of time i think :) there is another way though, chinese way, they add yeast to it, that, you have to let it ferment for six hours after mixing all the ingredients. it is good too. it has this sour taste to it.

@@Noreen_Reynoso22, give it a try. it took me trials and errors before i came up with the recipe to share to people. make sure na lagyan mo ng basahan yung steamer. kasi napupunta yung tubig sa puto while steaming and i think yun ang nagiging problem ng iba. it becomes white kutsinta :)

Pag naglagay ng yeast need iferment pero kung baking powder bigas lang ang ibabad sa tubig b4 gilingin just like old style sa province. I did try with yeast palpaak sya then i tried only baking powder and it was perfect

i use a very high powered blender. vitamix blender to be exact. siguro mortar and pestle mo muna yung rice, soak, then blend. what kind of blender do you use?

You steamed it for more than 1 hour? I think that is way too long for a puto to be cooked.

Hehehehe. Ano nangyare? Ako siguro naka ilang gawa nyan bago ko nakuha ang gusto kong texture :) pinanood mo ba at binasa mo yung notes ko?

opo baka expired na yata baking soda nun ... two hours na steam ayaw talaga umalsa ... nagmala tikoy waahhaah ... next time uulitin ko po saan may mali ... pagkalagay poba ng baking soda ilan oras hintayin bago esteam ?

@@merlincalago5945 ako nga chef na, nagkakamali pa rin. cooking is an unending learning process. i studied french cusine pero pinag aaralan ko ang pinoy cuisine. just try to have fun on the process. bago ko nakuha yung gusto kong puto na ito... mga ilang beses din. yung kauna unahan ko nga naging parang kutsinta na kulay puti. just keep trying, it will be worth it to learn and discover new things from your mistakes.
