My last year on KZbin was pretty exciting … I have tasted some pretty awesome wines, failed, and succeeded in several blind tastings and I have experimented with some new topics and formats.
Some of my videos got quite a few views and they introduced the channel to a new audience. It grew more than tenfold over the past 365 days and I am very thankful for your support.
It was my goal to get to 10k subscribers at the end of 2021 and at the beginning of last year this seemed like an impossible target but by a combination of your help and luck, we made it to 10k by the middle of the year. Many of you are recommending the channel and are sharing my videos which is cool. I am going to make sure that you get even more exciting videos for this year. It is going to be a busy year for me personally and professionally, but I have said NO to some opportunities to make sure that I can focus more on the channel and keep you entertained - so hold on to your hats or your glasses … ! As the channel has grown, I now get hundreds of comments on a video which makes it difficult to keep up with your questions. In this video, I want to answer some of your most pressing questions in detail. There were some topics that I grouped together and just picked one question representative of the category but I also put in some random, but interesting questions: The questions are from my KZbin Community feed that you see if you subscribe to my channel and from my Instagram account and I picked some questions from each account.

It would be great to see a video about how to stock and maintain a wine cellar. For example, say you had space for 1000 bottles: what would be some wines you must have; how many wines you you lay down for years; how to manage drinking windows; how to test whether a wine is ready to drink; whether to store some wines at drinking temperatures etc.

Don't sleep on Wine Folly's videos, they've been so helpful to me during my journey! And I love your channel as well. It could be fun to see how different regions prioritize different aspects of wine-making, for instance old world vs California vs PNW vs South America vs South Africa, etc. Terroir, climate, and barrelage specifically.

Regarding your question at the end: All the videos I've watched on this channel are really insightful into their respective topics. However, there isn't a backbone to the channel, in the sense that we cannot know what to expect about the topic of the next video other than KZbin polls. What about introducing sections (viticulture, winemaking, geography, ampelography, tasting techniques, specific tasting notes, etc.)? That way, the viewers (and potential new subscribers) can associate it to something more specific than just the wine industry, and that added sense of identity will surely help the channel grow! Best of luck for this new year!

I would like to see a world tour of wines in the $15-$20 /€15-€20 range from various regions of the world (Italy, France, Germany, Spain, West Coast USA, Australia, South Africa, Argentina, Chile, etc). I can see each video focusing only on 4 wines from each region. People could try to find those wines and see if they are able to smell and taste the same notes, for example. Suggested food pairings could also be included from that region to really see how the wines pop when paired with the right foods

Congratulations for what you are doing, the time spent answering all this questions and making so many interesting videos. Although there are rules in wine pairing, we have another confirmation of the Latin phrase - de gustibus et coloribus non est disputandum. One of my favourite combinations are dry wine-desert and off-dry wine-main dish. I think combining the salty food with sweet drink including wine is very good. That’s of course only matter of taste and probably eating habits which differs in different culture.

It'd be interesting to do a few segments on wines that have either experienced a surge in popularity or that have fallen out of favour (due to a change in taste or simply because not considered 'fashionable'). For example, the 'journey' Barbera d'Asti has been on in the last decade is quite remarkable (though I am biased, coz I am from that region...). Keep up the good work - I really enjoy the channel

Great videos, Konstantin. How about some tips now and then on the easiest European wine regions to visit using public transport? For those of us who don't want to drive to wineries, or pay for expensive tours with unnecessary frills like a personal chauffeur or gourmet food, but like to spend a few days exploring different wine regions.

I'm new to your channel and so far I haven't been disappointet. Personally I'm in search of value. I find it interesting - and satisfying - to find wines that have an optimum relation between price and quality. It's sort of like a treasure hunt. I rarely pay more than EUR 25 a bottle, but I still find what I consider 'gems' within that budget. If nothing else, I've learned which wine regions to avoid.

I like you're channel very much, i tell all my friends about it. I like you're take on wine and tastes. Wine is magical, i have a history in my family in working in the grapevine, and i drink only wine and water (except coffee in the morning ) for years now, but not working the wine myself even dough i want to make a living out of it . I would like that romanian wines had a more impact in the world but we have over 300 local wine grapes, but we only commercialize under 20, and that seems that lacks what you have.....passion. Its nice too see passionate people about wine in general like you. Lot of people like wine like a trendy fashion, but wine is art. Keep making your art promoting this art. :)

@@KonstantinBaumMasterofWine Über die Frage nach dem Erlernen des Schmeckens von Qualität hinaus, fände ich es sehr interessant zu erfahren, wie man "Fehler" schmeckt. For the rest : continue with the mix of videos you've been creating. Not sure if you still read comments on old videos but in response to why there aren't more wine youtubers, I think it's multifaceted, and I'll speak from my own experience. 1. Describing a wine's taste and smell is very abstract, and in a sense can be quite subjective, especially with regards to those who are just starting out on their wine journey and those with a different culinary experience. For example, people in Asia don't really know what "red fruits" or "black fruits" taste like, and often do not know what plums or apricots smell like either. 2. Sourcing wines can be difficult. There may not be an importer in your region, and often purchases are based on trust. Online shopping is becoming more popular but for example I would much rather go to a trusted importer or purchase through auction houses than a random website especially considering I have no idea how they store their wines. 3. Most wine youtubers spend more time smelling tasting and exclaiming on camera, something that is enjoyable for the taster but doesnt add much for the viewer. Personally I quite like addition of quick points about wines and pertinent details. Some youtubers add too much information in their videos as well. Overall, I think more structure and organization would be helpful.

Loire wines are not super cheap! If you are searching for a good qpr regarding sparklers I recommend Franciacorta (Italy) and Cava from Penedes (Spain) for anything like champagne. For anything else sparkly Prosecco is really cheap. For something that is sweet and sparkly go for a good Asti Spumante even though I know it has a bad rep. Generally bargain wines are found in the following places: Portugal, South of France, South Africa, Chile, Argentina, Germany (however the bargains are rarely exported).

Very good point on climate change that many do not appreciate. Some places will do better, while others do worse. It's why is very difficult to objectively model and predict climate change impacts.

Thumbs up for the channel and this video. As you mentioned Wineking, please don‘t go there, I think it‘s too loud and unsystematic. Peter has some interesting insights, but Jay is a bit hectic and just ranking the 237 Chiantis Jay was able too source is plainly boring. Pat Farrell was a great loss for them, sadly he ha ceased his own channel obviously. As suggestion what Ikd like to learn more about: What‘s the expectation for charecteristics among adjacent crus? E.g. What do I expect from a Rully as compared to a Mercurey or a generic Burgundy or Cote Chalonaise? Or a Margaux from a Saint Estephe etc. etc. I thus liked the Gigondas video particularly!

In terms of high alcohol wines paired with spicy foods, gewürztraminer is often recommended with spicy foods, and it's usually somewhat high in alcohol. What is it about this varietal that makes it the exception?
@KonstantinBaumMasterofWine
@KonstantinBaumMasterofWine 2 жыл бұрын
It is often also sweet and that helps with spicy food. I do not think, though, that a 14abv Gewürz is a good match with a red Thai curry for example.

What is something a lot of people overlook when deciding to go into the winemaking business professionally? I'm currently considering getting a degree in winemaking. I enjoy making wines at home and invest a lot of time and effort and passion into it, but I worry that winemaking on a commercial level will be so different that I lose my passion.

Seconded. Mightily seconded. I’m in a similar place as you, except I’ve already pulled the trigger on the degree, and I suspect that I’ll never get tired of making wine.

Mr Baum, can you tell us what the difference is between a Master of Wine and a Master Sommelier?
@KonstantinBaumMasterofWine

Both are difficult and come from the UK. The MW started in the 50s and the MS in the 70s.The MS is a qualification for restaurants and the MW is for the Trade, Journalists and Winemakers. MWs don't have a service element, have to write long essays and have to taste 36 wines blind vs. 6 wines for the MS.

Hello, what always concerns me as a sommelier is the subject of health. How much wine is not harmful? How do you handle this? I would also be interested to know which are the best biodynamic wineries in the world in your opinion. Thank you

Alcohol in itself is bad for you. Everything in wine is from nature (but then so is Hemlock). I appreciate the more natural farming techniques in some wineries because it saves our water supplies but some of the crazy "pick the grapes during a full moon when Jupiter is in the Seventh House" stuff is, well, crazy to me. To each their own, I guess.

@@halbert1000 well, it is as a doctor is the one with the specific competence to answer your question. Last time I talked to one he told me that everyday drinking is pretty bad for your body, especially your liver. One should have at least a few days a week without alcohol. That's why I try not to drink during the week.
