I baked this in an 8 inch round cake pan and used 6 large eggs. I used a combination of natural unsweetened cocoa and Dutch processed cocoa. I didn't change the bake times. Mine wasn't as tall because I didn't use a 7 inch pan, but it came out perfectly! Super fluffy and moist, I would make this again.

@@bz5674 It wasn't eggy in my opinion, had a nice bittersweet chocolate flavor. Definitely on the lightly sweetened side.

I've made this several times and the recipe is amazing! Tip: Don't butter your pan or else the cake will fall out when you turn the pan upside down to cool!

Hi Xiao Gao Jie, I want you to know that I am a huge fan of your recipes. I watch them just for relaxation and fun and occasionally it triggers me to make something. I have always wanted to know how to bake bread but never tried it out. I used your recently posted baguette recipe because you made it appear so simple. I was shocked to see how successful I was in creating two perfect baguette loaves - thank you! Now I am no longer afraid to bake bread. I have a question for you - I use the cup measures that you post as equivalent to the weights you list for the ingredients. Does it matter to go by weight instead of cup measures? I don't have a kitchen scale but would get one if you think it makes a difference. Thank you.

Great video, finally after sometime in my playlist I'll get to try this tomorrow. But I do have some questions. Can I steam this instead of baking it? Can I use cream of tartar instead of vinegar for the meringue? Don't I need to line my pan with parchment paper (just the bottom)?

You probably can steam it, although I baked it. I used vinegar, but you might be able to use cream of tartar, and you don’t need to line the bowl. Try it sometime!

It’s actually pretty important not to line the pan with parchment paper. When the cake rises in the oven, it needs to use the sides of the cake pan as support to climb up to the ideal height. When the cake is cooled upside down, the bottom needs to stick to the pan so that it doesn’t collapse into the cake and take away the fluffiness, which is what happens if the cake cools right side up.

I just tried this recipe yesterday and it worked (the second time!!! the first time, i accidentally cooked my egg yolks 😂) I used half and half instead of milk and the cake turned out fine! (slightly more dense at the bottom) I was thinking of making a double batch of this but am not sure if the baking time will be much longer if I use a 10 inch cake pan? Have you done experiments on this before? :D 谢谢分享!!!!
