Koreans don't eat long grain or jasmine rice dude, we eat short grain. It's pronounced "jah-jang meyun" & "thuck bow gee" & "bee bim pap" & "coh-chu jahng" which is chilli paste, not soy bean paste. Mix the two together, you get sahm jahng, wich you eat with lettuce wraps. Marinade for kalbi is the same as bulgogi. My mom's jah-jang meyun has pork, potatoes, zucchini, onion & carrots. It's actually a Chinese influenced dish.

the daikon is supposed to act as a palette cleanser (like ginger to sushi) since its fried it can start feeling a bit too greasy/heavy so the daikon is there to help cut through some of the grease

You should try bibimibap in a hot stone bowl at a restaurant the rice gets crispy on the bottom 😊 if you think about it bibimbap is kinda like Korean chipotle lol... Also if you love the Korean soy bean paste there’s a soy bean soup they make with it! It’s one of my favorites!
