My paternal grandma who lived in a ranch in Jalisco would make tacos with cheese and honey and cinnamon tea with a splash of milk. All fresh homemade ingredients. I thought it was the most delicious food I’d every eaten. If you’ve met tasted a corn tortilla with fresh cheese and honey you don’t know what you’re missing. Yummy!

my parents are from a very small small small pueblito in méxico. they talk about their childhood a lot there, and of course a long with that they speak a lot about food. after they migrated to the united states and had me and my sister, we grew up eating this in the mornings. so delicious. Of course mom and dad would explain to us that that was the only thing they would sometimes be able to eat in méxico, calling it “comida de pobrecitos”. but i hated the negative connotation that applied to food like this, and im reminded it of it whenever i go to visit family in méxico, they’re appalled that i love this food because i’m an american citizen, but this food here, its home. it’s childhood and memories that i learned from my parents and grandparents, that they were so generous enough to share with me and my sister. it’s love, pure and simple.

Talk about taking you back to your childhood; fifty years ago as a young boy living in Santa Fe NM we used to visit my Grandmother who lived in Pecos. There was a little old lady there who made a similar cheese using goat milk, it was the best cheese I ever had!!! I just use store bought tortillas cuz it is too hot to stand over a comal! Just FYI: I've seen a program from Italy where they use the whey to make ricotta! So nothing goes to waste. You can pretty much freeze cheese. I’ve done it with queso fresco. It’s perfectly fine for 3 months in a air tight freeze bag. Just break it into pieces so you don’t have to defrost the whole cheese. As for the fridgegtion, if you don’t throw away the whey and use it to store your cheese in a container ( the liquid that she threw away in the video) , it can last 7 to 10 days. Just make sure it’s place at the very back of the fridge ( b/c it’s colder) and always do a smell test and check the color for red or black molds.

If you add lemon zest and some herbs to the cheese once set up you can make lemon ravioli or add anything with it my mum is greek and adds mint and make a thicker pasta dough for greek ravioli 😋

@@joebarker8323 I've put my cheese wrapped in a paper towel in a tupperware and changed the paper towel and tupperware twice per day and had it last over a week. If it smells sour and/or becomes slimey, don't eat it. But I've gone through a gallon of milks worth a (few) spoon each swap in that amount of time. You're going to have more problems keeping people from eating it honestly.
