We'll have to try this. I'm from Boston, now living in SE Asia, and grow coconuts, with 2 groves. I can't believe than no one's doing this here. All these ingredients are easily available. But home baking simply isn't popular here, people just go out and buy all their baked goods.

@@mariaroldan4200, here, in the Ring of Fire, gas plumbing is nonexistent, because of earthquakes and volcanoes. Very few people have gas ranges, I know of only one lady on my street, that has one, besides me. We burn a tanked gas called Gasul, it burns way hotter than propane, and lasts much longer. My gas bill is $16.00 a month. But no, most people don't bake, except for loving bakers, that do a fantastic job, like in France.

I have got to make this, because I love anything coconut. But I can think of a fun variation which I'm surprised as it mentioned here. How would that take me if you zested two or three limes, and added in that lime zest to the cake batter coconut and lime karma together, is absolutely sublime. A little bit of fresh diced mango, perfectly ripe, and some whipped cream? Baby, I'm all in.

Julia, I’ve made this recipe from your food processor book (it’s a regular vanilla version, not coconut). In that recipe, you add flour mixture into the food processor too, and just pulse 4-5 times. Do not over-process. It’s the best pound cake ever! Absolutely perfect. Curious if you’ve tried it that way with this one? And I recommend larger 5x9 pan, because it looks a bit nicer with cleaner edges. :)

This pound cake does look lighter than the usual pound cake. I’m going to try this recipe. I was surprised, though, because there is no actual shredded coconut in the cake. I wonder if I could add some on the top of the whipped cream? Sounds good to me!! ❤️

Hi Julia and ATK, you need to be more specific for the depth of the pan. The one she's using is 2.75 or 3 inches deep. I tried it in one that's 2.5 inches deep and it was right to the top and spilled over and continued pushing out of the cake pan.

I added the food processor ingredients to a high sided bowl, a sauce pan would work too, and used an immersion blender. They are inexpensive and versatile. Hope this helped.

To get cream of coconut from coconut milk all you really need to do is, put your can of coconut milk in the fridge overnight (dont shake it!). In the morning (once again dont shake it!), open the can BOTTOM with a bottle opener and let the water/juice/additives drain out! All that's left will be the actual coconut cream!

That's coconut cream, not cream of coconut. Cream of coconut is sweetened with sugar, coconut milk isn't. Think evaporated milk vs condensed milk.

16oz is weight, you're confusing that with FlOz, which is volume.

2 cups is 16 ounces in volume. A cup of flour typically weighs between 4 and 4.5 ounces. 8 ounces’ weight for a volume of two cups of cake flour sounds about right to me.

Propylene Glycol is actually an organic alcohol used most often as a skin conditioning agent and food additive. It is occasionally used as an ingredient in antifreeze but it is not harmful. You're thinking of Ethylene Glycol. Variations of Propylene Glycol are used in all sorts of medicine, Healthcare products and foods. It is used to absorb excess water and maintain moisture levels in many products.

I have made this (regular vanilla version, not coconut), it’s actually an excellent pound cake with perfect texture. I think you imagine it as soft regular cake, but it’s not, it’s a really perfect pound cake. Try it! :)

I must have messed up somewhere. The cake split at the top, but of more concern it took an hour and 20 minutes to bake. It was still liquid inside at 60 minutes.
