This week I'm prepping some healthy apple muffins, Instant pot apple pie filling, simple meal prep salads and I show you how to make 2 things at once in the instant pot!
original instant pot apple recipe-
sweetandsavory...
my version-
6 sliced apples
1 cup water
4-5 pitted dates chopped
1 tsp cinnamon
corn starch slurry- 2 tbsp corn starch, 2 tbsp water (I would try adding after its done cooking, stir in while its still hot)
pressure cook for 2 minutes
apple muffins ingredients-
wet-
scant 1 cup plain milk of choice- I use soy
2 tsp apple cider vinegar
3/4 cup date sugar- I did blend of date and coconut
1/3 cup almond butter
pinch of vanilla bean powder or 1 tsp extract
heaping 1 cup chopped apple
dry-
1 1/4 oat flour- i measure slightly packed
1/2 cup almond flour- slightly packed
1/3 cup protein powder- I use pea powder
1 tsp ceylon cinnamon
1 tsp baking soda
1 tsp baking powder
1 cup more chopped apples for topping
bake at 350 for 25 minutes
