As a Grenadian I was curious to see your version of oil down. I'm happy you said Trini version. I have seen other vids where Trinidadians make oildown like a soup. As you said you like it wet. Good thing about food is you can twist it to your liking. In Grenada a couple things we never do with oil down is 1( Never ever stir it) 2) (The coconut milk is reduced where it is not like a soup) 3) (Freshly grated coconut to get your milk.) 4) callallo covers the top completely where you cannot see anything under only when it's cooked. Your Trini version even though abit different look good👍🏾
