When I was a kid, I remember being so confused by coffee cake because it never tasted like coffee. Way back in the early years it wasn't actually uncommon to add coffee to the ingredients. I've even come across a few recipes in my time where they added coffee.. I didn't like it though lol. But yes, It was named coffee cake because it was meant to be an accompaniment to a cup of coffee.

In 1998, a retired gentleman (Norman Penny) published in the local newspaper a recipe for his mother's "Swedish coffee bread". It was almost identical to this cake except that (1) he used, as a leavener, yeast instead of baking powder, and (2) he rolled the dough into a roll and then joined the ends of the roll to form a ring; then he baked it and drizzled cardamom-flavored icing on it. I've made it repeatedly over the years, so it was a surprise to see this version.

Hey Grandma! I made this today as I said I would . It was very easy to make . it’s a nice simple cake that goes great with milk or coffee. I wanted to make it so I could experience first hand what it tasted like to have something that my very grandmother might have also had way back then when the depression was among America. It’s really neat to be able to do that and I bet this was a real treat or used to fill the empty bellies of so many back then with a cup of coffee. Thank you again for sharing and I hope you can find other depression foods to share.

This video is so cute. I bought a vintage beater like yours. Mine just has red handles instead. I also have the same mixing bowl set you have. It's way nicer than the All Clad stainless steel set I bought. The metal has deep scratches and even a chip or pit in one of the bowls. I am not going to use them f anymore because they just aren't smooth enough to be cleaned properly. I'm going to modify this recipe using coconut flour and sprinkle it with a little nutmeg or unsweetened shredded coconut because of dietary restrictions. I don't care though. It'll still taste nice and I really appreciate your video and recipe. When I use my mixing bowls, it will remind of you with your mixer and bowls.

@@anitam.924 milk would be a plant milk, butter would be a vegan butter like earth balance, or even applesauce. And the egg can be used with flax egg or applesauce or egg replacer... a Google search of how to substitute for baking should help you. The substitutions depend on the recipe. Applesauce tends to make things a little heavier, so j avoid using that in a cake.

I don't have an 8x8 dish. I suppose I'll have to.use 2 loaf tins.

If you have a large loaf pan the batter may fit in one large pan. If not two small loaf pans should be ok❤️Grandma👩🏻

For sake of interest, was it difficult to get hold of salt during the depression years?
@GrandmaFeral5 ай бұрын
I don’t think so. I just cook without salt. I just get the natural salt from vegetables.❤️Grandma👩🏻
