I gift our 4 grown children freezer meals for their busy week nights, I cooked 50 lbs of ground beef in many different freezable family sized meals. I made casseroles, meaty dressings, soups etc and it’s one of their fav gifts at Christmas. (We raise registered Brangus cattle and I utilized that advantage). Needless to say, I am not feeling like cooking, thankfully I stored one of each of the dozen options for my husband and myself. I work in a kitchen as a cook and when I get home the last thing I want to do is cook. I really love my slow cooker and instapot for the days I’m just too tired. Our favorites are shredded beef fried tacos and Cuban sandwiches with shredded pork.

I make a similar hamburger soup, I use V8 as the base , it needs to be V8 in our home as we notice a difference in taste, 1 tbs HP sauce,1 tbs wash your sister sauce , what every veggies I have and a grain/rice with hamburger, I have used left over taco meat,spaghetti sauce , it always turns out .

We just got home from church a little bit ago. I told the kids we'd get Mcds afterwards so that's what we are having. I love quick & easy meals. You always have great recipes and ideas 💝 Thanks for sharing with us 🙂 I didn't make a new yrs resolution, but I did tell my kids that this yr is gonna change. I said I'm done being a short order cook. I'm making foods and y'all gonna eat it. My oldest 12 (almost 13) is so picky. Been a struggle like for 10/11 yrs, like practically his whole life. And it flows down to the others who then fight the foods. He ate 2 (Two!!) Ham & swiss cheese sliders & 3 popcorn shrimp and he liked it all! I was like Hallelujah! A new yrs miracle lol

I usually cook multiples of a meal, portion, and freeze. There's usually something in the freezer that can be microwaved. Or I'll open a can of soup, add a package of shelf-stable udon noodles, some frozen vegetables, and microwave. Or tell my husband (it's just the two of us) that it's make your own sandwich evening!

Mindy, I started watching your channel as a curious person who is learning her way to a good relationship with food, combined with how to really make tasty nutritious food on a reasonable budget. Even though I’m from Europe, I find your videos incredibly inspiring and useful - it’s the way of thinking you are handing over to us, never mind we have different shops and brands. For Christmas I wished for a cast iron and today I made my first meal with it - the chicken pasta with cream sauce from this video. And I am absolutely in love. Hi Mindy. A really easy crock pot dinner I make is a ranch chicken dish. 4 or 5 potatos (depending on size) cut onto bite size pieces A cup of diced carrots, but any veg would work really. 2 chicken breast but into bite size chunks Package of ranch mix 2 cans cream of chicken soup 1/4 cup milk Put potatoes and vegetables into crock pot, then chicken. Season lightly. Mix soup each mix and milk and pour over chicken. Cook on high for about 2 hours. Garnish with cheese and or bacon. Some people serve it over rice. I just do it like a soup or stew.

OMG yes! I have set some goals myself but you are so right about decompressing first. The holiday's are so busy busy busy. So I too am taking it easy for the first couple weeks of the new year. I will be taking down decorations slowly at my own pace. Gunna try and not stress over having boxes sitting around...they will eventually get filled and put back into storage... Holiday foods, can still be eaten so no need to panic over, what's for dinner. And a big one for me : make that budget, write it out, decide how much goes where in my sinking funds etc etc... But doing it my own pace. Mindy I love how informative you are..thank you. I was wondering if you could tell me how to clean out the crock pot properly. I like to cook beans in my crock pot but no matter how much I scrub it they're always seems to be some sort of being residue left on the sides. Any suggestions?

I highly recommend looking up a skillet lasagna recipe. It is one of my favorite things to eat on a cold night. I use half noodles and half chopped zucchini to make it lower carb, plus I love the slight crunch from the zucchini.

I ended up getting a new Aura for free! My SIL is a matienence man at an apt complex, someone moved out and left a bunch of stuff the aura being one thing. It was still in box and I dont think ever used. We cleaned it up just incase and I am loving playing with it! The saute option is my fav feature!

Even remembering to get out meat to thaw is hard sometimes. I have picky eaters & 2 don't like the same things. Eat what's cooking or figure out how to feed yourself. PBJ works.

Kind of winging it when it comes to meal planning. Have to do inventory via my hubby because of a mobility issue right now and the weather changing to a possible ice/freezing rain which usually means power going out. It's going to be a freezer/pantry clean out any way this month with a low spend goal. Property taxes and car tags coming up really strains the budget so my stocking up all year will pay off this month. Lot of changes coming this year with some declutter and remodel so I am soaking up all the info on organization I can get. Meal planning is a big part of that because it deals with a large part of the monthly budget. Thank you for your hard work in teaching us new ways to manage cooking good tasty meals at cost effective prices.

The chicken smoked sausage you used in your fajita meal is what I use in a gyro salad I make. I make a regular salad and add the sausage, feta cheese, onion,tomato,cucumber and then I make a tzatziki sauce that I use as my dressing. It is so good! I look forward to trying your ground beef stew. That looked good! I like the one pot chicken alfredo meal…I’ll have to try that one too.

I also hated slicing up chicken. I use kitchen shears now. Lol. Stab it with a fork, to pick it up, then just cut it into pieces, right over the skillet.

At Walmart by the deli (with the prepackaged potato salads, cold fried chicken, Bob Evans sides & Hormel meats) they have 1 lb containers of chopped rotisserie chicken. The flavor isn't so strong that it won't blend in with other seasonings. Good shortcut.

I actually buy hot fresh rotisserie chicken on grocery shopping day as a reward for doing the shopping . . . take it home and throw some veggies and pasta or potatoes with it for a quick meal. This keeps me from wanting to pick up fast food and is much less expensive. Plus I can freeze any leftovers later to use in meals like Donna suggested here. Just another idea. As a rule I am not a very adventurous eater. Partly because I have some dietary restrictions, but mostly because I know what I like and I like what I know. But when I think about it, this mainly pertains to ingredients - I have just been cooking them the same way I always have because that's how I thought it had to be done. However, many of your recipes show me that I can take ingredients I like, cook them using different methods or techniques and come up with a completely new dish - that I love!

I make chicken nuggets with don’t diced chicken breast. Dip in butter , then coming: equal parts of breadcrumbs, parm, and chopped nuts. Bake off or air fry.

Dicing chicken is one of my least preferred kitchen tasks. I generally decline help from others in my kitchen bc I am kind of a control freak and having other people “help” throws off my cooking process. However, dicing chicken, peeling potatoes, and shucking corn are all tasks I find easy to delegate 😆

Mindy, wonderful meal ideas…you rock. To change up your beef stew recipe, you could add curry powder & frozen peas. I make a similar meal here in Australia & we call it savoury mince (we call ground beef mince over here) I add beef stock & gravox (a gravy concentrate that’s available here), serve over rice or mashed potatoes & it’s comfort food in a bowl. I recently stumbled onto your video's and have watched a bunch by now :P Thank you for making them. Although I don't live in America it still nice to watch an try a few idea's ^^. I also don't like to cut raw chicken. What helps for me is to cut it when its still a little bit frozen. It cuts so much easyer. And if you happen to have fresh chicken, trow it in your freezer for 20-30 min maybe bit longer depending on how big they are. Really helps for me. Have a wonderfull new year. :D

I have an instant pot that is the circular shape. It has a slow cook option but I've discovered that option doesn't work like a true crockpot since it only heats from the bottom as opposed to true crockpots/slow cookers that heat the entire surface. Does this featured Instant Pot do a better job at slow cooking than the older model? I don't want to purchase another instant pot and take up more space if its going to do the same thing.

Right now I’m the opposite, I wish I could cook. We’re retired and moving to downsize and it’s taking alot longer than normal. We’re both physically limited and doing it on our own. We’ve been in our home for 20 years and have way too much stuff. I’m not able to cook right now and I’m sick of eating junk.

I do have one question I'm hoping someone can answer. For one pot meals or even the slow cooker meals, if I want to cook pasta with everything else, how much liquid do I need so that it gets absorbed but does not make the meal too loose or soupy? That ratio is the only reason I haven't tried to experiment with one pot pasta or slow cooker pasta meals.

For me it’s typically 1:2 pasta to liquid. So I use 1 cup (8oz) liquid for every 4oz of pasta. So for a pound of pasta, I would need about 4 cups of liquid. Sometimes it takes a little experimentation because some of the other foods in a recipe (like tomatoes) will add liquid to the recipe.

I got one of those Instant pot multi-cookers for Christmas as well! I wanted the Aurora but it was sold out as well as the Cosori one. I got that one and I love it!!! I wasn't sure how I was gonna like it, but I wouldn't trade it for the world. I take every shortcut in the world! Lol anywhere I can take the easy way out, I'll take the "shortcut for 200 Alex!".

Not sure. I think all the major brands like Hamilton beach, kitchen aid, cuisinart, ninja, etc. make them now in various sizes.
