Mindy, You are absolutely wonderful. You have so much to offer to mothers who have not much money in their purses when they go to shop. I wish someone at the food banks could copy your information and provide it in food bags when they hand out the bags. Though often mothers in need do not have a car to shop, most will be able to get your staples at a nearby discount grocery store. Where I live the groceries are about three times the price you show but then again our minimum wage is $16 and hour. To all the food banks out there help spread Mindy"s information. Her food is nutritious and the portions suitable for children. Nothing is wasted. GoGirl.

To cook Brussels, potatoes and carrots quicker, . Microwave in a bowl with 2 tbsp of water for a few minute and transfer to sheet pan the roast. This cut the roasting time in half.

A lot of slow cooker recipes I avoid because "ugh, browning the meat, transferring, cleaning, I may as well just cook it now and forget the crockpot." Love that you can brown your meat, no cleaning, no transferring, no fuss, and then continue with the recipe. This is definitely the slow cooker I need, lol.

Instant mashed potatoes are even easier if you use a water pot. A friend got me on and I use it for instant instant oatmeal, potatoes, rice, stuffing...anything instant that you would need to use boiling water in. I am able to skip the pot and just make it in the bowl. That also saves in dishes, especially if there's leftovers.

I make a very similar Italian dish using sausage, diced tomatoes, onions and Italian seasonings. I brown the sausage and onion in the instant pot. Then I dump in the pasta and canned tomatoes with juice. Pressure cook for about 2 minutes then finish with heavy cream and Parmesan. It’s absolutely delicious! Huge fan favorite around here 👍🏻

Oh that's a great idea, Stephanie. It's actually not an instant pot in the traditional sense. It's a slow cooker with some extra settings, but no pressure cooker setting. I must be the only person on the planet who doesn't get the hype of those things. LOL

My son's gf recently got my ex-MIL recipes for sauce and gnocchi so she can make it for us (my ex is Italian, these are very authentic recipes brought over). She has made them for us three times now since last year's Thanksgiving/Christmas season and has vowed to only make them on the holidays, lol! I don't think it's too difficult, we just don't have the easiest kitchen to work in.
