You guys are TOTALLY awesome! I used to have a vegetable garden every year, hang lots of bird feeders, grill outside, etc. I became disabled, lost my home, & now live in an apartment building where I can do none of those things. It brings me some joy to see you doing this. I can still make pickles!

I read that if you cool the mixture in the fridge before pouring into jars, it will keep the pickles crisp. The heated mixture is essentially cooking the pickles in the jar which is why they come out mushy and soft.

I love making refrigerator Pickled beets. Im glad I saw this video. Odd shaped cucumbers but its ok. You have your fresh stuff. Kudos. I ran out of apple-cider vinegar so I had some rice vinegar in the kitchen and the beets turned out wonderful. I use store-bought canned beets so its easy as pie. I dont boil; anything. I just let them sit in the fridge and they take in the spices and whatnot overnight or 2-3 days. Whatever ya like.

All you have to do is pick up a jar of Ball Pickle Crisp, aka calcium chloride. About a quarter teaspoon in a jar that size will keep those pickles crisp for a lot longer then without. A small jar, around 5 or 6 bucks is enough to do a ton of pickles and soggy turned pickles will be a thing of the past.

Scoop Yall the point of refrigerator pickles is so you can enjoy them quickly without all the hassle and process of heat treating the jars. Plus if you use that method they won’t be as crispy, that’s why people choose to do it this way.

I have a question for you. I had everything ready, turned off the brine and got a phone call that lasted about five or so minutes. Then I put the pickles in the jars and poured the brine over them. The brine was still hot but not boiling. Will they still be okay? Help! Thanks.

Do we need to heat vinegar mixture? Can we just mix it well and pour over? I would prefer to preserve more vitamins and enzymes.
@helpfulnatural8 жыл бұрын
When I make mine, I boil just the water to dissolve the salt & sugar, if using. Then I remove it from the heat, let it cool for 15-20 minutes, then add the vinegar. I too want to preserve as much of the benefits of the raw vinegar as possible.
@lauraslocumb2576 жыл бұрын
If you have botulinum toxins in them you won’t need to worry about preserving vitamins & minerals. Pickles are eaten for the pleasure of the taste not nutritional reasons.

Just a couple FYI's for you. Once you add the salt water to the jars with the cucumbers, you ARE fermenting. Refrigerating also stops the fermentation process so if you want a good pickle, don't put them in the fridge. Place them in a cool, dry place where you can maintain a good temp for 7-15 days, depending how strong you like your pickles. You CAN put them right into the fridge but it's going to take allot longer to make your pickles. I'm sure you will deny this and say your pickles taste just fine. But try fermenting them at room temp for a week and see the difference.
@theboxer57 жыл бұрын
Won't the cucumber will spoil and you get food poisoning and sick?
@MrCougar2147 жыл бұрын
It's been awhile since I have made them this way. My wife likes the refrigerator style better. But when fermenting at room temp, you have to keep the pickles covered with grape leaves and under the brine at all times. I don't know the exact process that is taking place here other than the fermentation, as it pertains to bacteria. I'm assuming it's the salty water. But I have seen vids where they have to check the pickles periodically and skim off some foam at the top, presumably this is where the bacteria would grow. Best advice I can give is check out vids on this natural fermentation. There are plenty of them here on youtube. best of luck to you. Of course you also have the canning style too where it's all sealed up nice and tight and been boiled so no bacteria there. Just place them in your cabinet for however long you wish.

NetRep humanity has only had refrigeration for less than 100 years. Fermenting has been around for centuries

Why is it necessary to boil the water? The salt would just naturally dissolve in warm or tepid water. Also - Why is it necessary to let the filled jars cool down before putting them in the fridge ? What's the point ? You leave out information that the novice ( like me) would appreciate being explained.
