Great video and useful for many things, but I would question the "low poly" description. I copied your tutorial precisely, and the resulting mesh had over 400k verts and 540k tris!!!

Hello! Thank you very much for watching my video! 😁 If you want to further reduce the number of verts and tris, while you are manipulating the curves, you can reduce the "Bevel -> Round -> Resolution" to 1 and also the Resolution Preview U value down in the Shape menu on the curve. 🙌🏻 Hope this helps! ✨

My grass turned black after converting modify
