Do you think you could tell the difference between sealed skinless chicken and unsealed skinless chicken when cooked in a pressure cooker with a curry paste base? I don't think so myself. Nice curry though. Does need to go faster as Rekha said.

Why wouldn't you sear the chicken separately to crisp up the skin and cook it faster without being "insulated" by the masala and allowing for a higher temperature sear? Also, why not use vegetable or chicken stock instead of water for the cooking stage?

Hi Stephen, if you're gona use the pressure cooker like she's using, ones you close the lid of the pressure cooker, takes about 5-7 minutes get fully pressured , then it would release the pressure, then it stops and just wait for 2 more whistle like that, then you're good to go.

Roughly 7 minutes. If you cook chicken longer, it gets leathery. A suggestion: if you on;t own a pressure cooker, this is as easily cooked in an open pot. Just cover cook first 5 minutes on a medium flame and ensure there is enough moisture to keep it from burning. So keep checking. Suggestion # 2: If you are using fresh tomato puree, dont add at the start as it inhibits the chicken from cooking. Cook it off line, in a separate pan with a dash of all the same masalas. Menawhile your chicken is getting done in another pot, right? When it gets done, add the cooked puree and let simmer 2 minutes.

+John Smith you have to bear the heat a bit, nothing tasty comes easy. The portion in video after she adds tomato puree (paste) and then cooks the tomato is crucial. After cooking tomato and oil seperates from your tomato puree masala mix. You add the chicken into this mix. The key here is you must *cook* your chicken in that tomato puree masala mix for 10-15 minutes (not less). Only then will the chicken cook well. Then add just enough water for chicken to immerse and put on pressure cooker lid. If you feel gravy is a bit less then add some chicken stock cubes to water seperately and make some stock and add to curry. Do not simply add plain water. If you are a beginner 15 min is not enough, keep aside 30-45 mins. Chicken will come out yummy. Trust me.

I have a question : has anyone ever tried grinding cardamom, cloves and then adding it to the ghee/oil ? I'm curious how it would be, because my style is that every flavour should be distributed uniformly. I've never seen anyone do that and was wondering if there's a good reason not to

HELP NEEDED!!!!!!! Hi can you please help me? I make 400gms of boneless and skinless chicken breast everyday as a chicken curry. My mum makes me the masala in the pressure cooker and than i add the chopped boneless chicken breast pieces to it and mix it well and water and than wait for 3 whistles and than i take the steam out of it by holding the whistle up. My problem is that the chicken i cook is so HARD and CHEWY most of the times but sometimes its so soft and melt in my mouth. please help.
