Quinoa Veggie Patties
Servings - 6
INGREDIENTS
Quinoa - 120 grams
Water - 300 milliliters
Salt - 1/4 teaspoon
Water - 180 milliliters
Ginger - 1 teaspoon
Green chili - 1 teaspoon
Paneer - 120 grams
Boiled mashed potatoes - 150 grams
Onions - 50 grams
Bell pepper - 50 grams
Salt - 1/2 teaspoon
Red chili - 1/4 teaspoon
Black salt - 1/4 teaspoon
Garam Masala - 1/2 teaspoon
Chaat masala - 1/2 teaspoon
Oil - for fry
(For Green Chutney)
Coriander - 5 grams
Garlic - 1 tablespoon
Green chili - 1
Cumin seeds - 1/2 teaspoon
Black salt - 1/2 teaspoon
Lemon juice - 2 teaspoons
Water - 50 milliliters
Yogurt - 60 grams
PREPARATION
1. Place a strainer, on the top of the bowl, add 120 grams quinoa, 300 milliliters water and wash it well.
2. Take a pan, add washed quinoa, 1/4 teaspoon salt, 180 milliliters water and cook for 2 minutes.
3. Cover it with lid and cook for 7 - 8 minutes.
4. Open the lid and remove it from heat.
5. In a muddler, add 1 teaspoon ginger, 1 teaspoon green chili and muddle them with the help of muddler.
6. On a board, place 120 grams paneer and grate them with the help of food grater.
7. In a bowl, add cooked quinoa, 150 grams boiled mashed potatoes, grated paneer, 50 grams onions, 50 grams bell pepper, muddled mixture, 1/2 teaspoon salt, 1/4 teaspoon red chili, 1/4 teaspoon black salt, 1/2 teaspoon garam masala, 1/2 teaspoon chaat masala and mix it well.
8. Take some mixture in your hands and shape it into a tikki.
9. Heat sufficient oil in a pan and shallow fry these until it turns golden brown in color from all sides.
10. Remove it from heat and drain it on an absorbent paper.
(For Green Chutney)
1. In a blender, add 5 grams coriander, 1 tablespoon garlic, 1 green chili, 1/2 teaspoon cumin seeds, 1/2 teaspoon black salt, 2 teaspoons lemon juice, 50 milliliters water and blend it well.
2. In a bowl, add 60 grams yogurt, blended mixture and mix it well.
3. Serve with prepared quinoa veggie patties.
