酸梅炆鴨腿Braised Duck Legs with Sour Plums
材料有 鴨腿兩隻, 酸梅醬三湯匙, 酸梅五粒, 桂皮一支, 香葉, 薑片The ingredients include two duck legs, three tablespoons of sour plum sauce, five sour plums, one stick of cinnamon, bay leaves, and ginger slices
用豆粉水把鴨腿表面清洗乾淨Clean the surface of duck legs with soy flour water
去除鴨皮表面的細毛Remove the fine hair on the surface of duck skin
用廚房紙巾, 把鴨腿表面的水份抹乾Use kitchen towel to wipe dry the water on the surface of the duck legs
用 一湯匙 的老抽, 塗滿在鴨腿表面Use a tablespoon of dark soy sauce and spread it all over the surface of the duck legs
給鴨腿上色Color the duck legs
鴨腿兩面都要塗滿The duck legs should be coated on both sides
醃五至十分鐘Marinate for five to ten minutes
把鑊煮熱, 用少許油Heat the wok. Use a little oil
放入鴨腿, 有鴨皮的表面向下Put in the duck legs with skin side down
輕輕搞動Move it gently
這樣就能夠給鴨腿上色This will allow you to color the duck legs
完成後的炆鴨腿就會很美The finished braised duck legs will be beautiful
煎完一面, 反轉煎另一面After frying one side, flip and fry the other side
用細火輕輕煎一下就可以Just fry it lightly over low heat

現在炒其他材料Now fry other ingredients
先放入幾片薑, 煎一下First add a few pieces of ginger and fry it
然後加入桂皮, 香葉Then add cinnamon and bay leaves
再把鴨腿放進鑊裏Then put the duck legs into the wok
去除酸梅內的核Remove the seeds from the sour plums
把酸梅的肉壓爛Crush the flesh of the sour plums
把酸梅肉都放進鑊裏Put all the sour plum meat into the wok
再加入酸梅醬Add sour plum sauce
輕輕煎一下Fry lightly
加入沸騰中的水Add boiling water
直至水位蓋過鴨腿表面Until the water level covers the surface of the duck legs
再加入老抽一湯匙Add another tablespoon of dark soy sauce
生抽一湯匙One tablespoon of light soy sauce
蠔油一湯匙1 tablespoon oyster sauce
冰糖少許A little rock sugar
再加入米酒一湯匙Add a tablespoon of rice wine
把蓋蓋上, 用中細火慢慢煮Cover and cook slowly over medium-low heat
炆鴨腿需時 30至45分鐘Braised duck legs takes 30 to 45 minutes
測試鴨腿是否已經煮熟Testing the duck legs for doneness
如果可以 用一支筷子, 輕易插進鴨腿內If you can use a chopstick, insert it easily into the duck leg
表示鴨腿已經煮熟Indicates that the duck legs are cooked
如果你想鴨腿再軟熟點, 可以加長炆煮的時間If you want the duck legs to be softer and cooked, you can increase the cooking time.
