Hi as far as my knowledge the boiled rice gives a firmer, chewer texture to idly and is always the best for authentic food. Idli rice is well polished crispy and the batter can also make crispy Dosa.

Oh my my!!!! Love the idili...I always failed to get the right texture for regular idili and I failed utterly...though it takes time to steam one idili at a time, it’s the best I have ever made....ramassery idili is the best
