AMERICAN CHOPSUEY
CHEF AANAL KOTAK
PREP TIME: 10-15 mins
COOKING TIME: 25-30 mins
INGREDIENTS:
FOR NOODLES:
• 1 pack noodles
• Water for boiling
• Salt as per taste
• 1 tsp oil
• Oil for frying
FOR VEGGIE SAUCE:
• 1 tbsp oil
• ¼ cup spring onion white part
• 2-3 nos. green chillies (slit)
• 2 tbsp garlic (chopped)
• 1 tbsp ginger (chopped)
• ½ cup baby corn (boiled)
• ½ cup carrot (julienne)
• 1/2 cup mushroom (chopped)
• 1/3 cup capsicum (julienne)
• 1/3 cup red bell peppers (julienne)
• 1/3 cup yellow bell peppers (julienne)
• 1 cup cabbage (shredded)
• 1 tsp sugar
• 4 tbsp tomato sauce
• 1 tbsp red chilli sauce
• 1 tsp soy sauce
• Salt as per taste
• Pinch black pepper powder
• 250 ml water
• 3 tbsp Cornflour slurry (1 tbsp cornflour + 2 tbsp water)
• 1 tbsp spring onion greens
• 1 tsp vinegar
METHOD:
FOR NOODLES:
• Boil water in a pan, add salt and oil, add the noodles and boil for 6-7 minutes.
• Further rinse the noodle with cold water.
• sprinkle some salt, mix well.
• Further fry the noodles till crispy and golden brown.
FOR VEGGIE SAUCE:
• Set a pan on medium heat, add oil, spring onion, ginger, garlic and sauté for 1-2 minute.
• Add the veggies and sauté for 2-3 minute.
• Add sugar and cook for a minute.
• Add tomato sauce, red chilli sauce, soy sauce, salt and pepper, cook for 1-2 minutes.
• Add water and cornflour slurry and cook till thickens.
• At last add vinegar and spring onion greens.
• In serving plate first pour the veggie sauce and top it up with fried noodles, garnish with spring onion and serve hot.
