Silky Steamed Egg with Minced Meat(pork, beef, lamb or chicken):
The flavoured meat is laid on top of the silky, smooth, soft texture of the delicious egg. You will feel satisfied and guilt free after eating this steamed egg dish. It's full of protein and essence.
I often eat this healthy, nutritious dish after feeling guilty eating a lot of junk food. It's great after a workout and as a breakfast. It's tasty, simple to make and cooks quickly.
It is high in protein and low in fat. I also choose lean beef meat, which only contains less than 5% fat, but you can replace with other meat.

蒸滑蛋材料:
鸡蛋: 3个
温水(30-40度): 240毫升
盐:1克
炒肉末材料:
牛肉/猪肉/羊肉:100克
油:8毫升
热水:200毫升
蒜头: 2粒
洋葱:30克
葱 : 1条
生抽: 8毫升
蚝油: 8毫升
胡椒粉:1克
麻油: 4毫升
生粉加水(粉芡)
做法:
1. 打3个鸡蛋
2. 加240毫升温水(水的比例是蛋的1.5倍)
3. 下盐,搅拌均匀,撇除浮沫
4. 盖盖子整8分钟,关火焖5分钟(注意我用的是碗口大的,碗底浅的,深的碗需要蒸25分钟左右)
5.热锅,下油,下肉末,蒜头,洋葱,放热水,下味道,下生粉水,撒葱花
6.肉末铺在蒸好的蛋上
Ingredients:
For the steamed eggs:
3 Eggs
240ml Water
1g Salt
For the fried minced meat:
100g Beef/Pork/Lamb
2 Cloves Garlic
30g Onions
1 Chopped Scallion
8ml Light soy sauce
8ml Oyster sauce
1g White Pepper
4ml Sesame Oil
1tsp corn flour + water
Method:
1. Beat 3 eggs
2. Add 240ml warm water (water ratio is 1.5 times of egg)
3. Add salt, stir evenly, and remove foam sitting on top
4. Cover the egg with a lid and steam for 8 mins. Turn off the heat and cover for 5 mins (note: I use a large bowl, with a shallow bottom. If you use a deep bowl, eggs need to be steamed for about 25 mins then turn off heat and cover for 5 mins)
5. Heat the pan, add oil, add minced meat, garlic, onion, hot water, flavour (soy sauce, oyster sauce, white pepper and sesame oil), corn flour water, sprinkle chopped scallion
6. Spread the minced meat on top of the steamed egg and serve.
