If you add spices into soy sauce and liquid smoke and then pour the mixture over your mushrooms, they'll coat much better and have deeper flavours

I am so glad I found you! I have bookmarked this! About onions, there's this weird trick but it works for me to a potency of 70 to 90%. I hold a piece of bread between my teeth while I am chopping onions. Somehow the chemicals cancel out, and it doesn't assault your eyes that much.

Just made it! Delicious!!! I substituted Lima beans for butter beans and regular mushrooms as the grocer was out of oyster mushrooms. Tad spicy because my tinned tomatoes were Rotel with chilies. Also deglazed with sherry instead of red wine. I lived in Spain for 3 years so any recipe that says Spanish _____, I want to try. Excellent pataje(stew)!

Hey Rachel. Try putting your onion in the fridge the night before you're going to use them. Or longer. It makes a difference when chopping them up.

I have to keep mine in the fridge as we live in the tropics. Does seem to make them less brutal. Or wear swimming goggles. I used to do that and it makes your eyes onion proof.

Eat bread while cutting onions to prevent watering eyes. Works every time for me.

I made this an I made another stew of yours. I follow a fair few vegan channels but can never be arsed to cook what they make. I always make your stuff though haha. Don't know why. Its always next level though. I had to use chessnut mushrooms as that's all we had, the oysters will definitely make a big difference with texture but that flavours are absolutely unreal. Definitely be buying that book when it's out 👍🏼

I put onions in the freezer 10 minutes before cutting them. The coolness keeps the vapor from rising and burning my eyes. Try it

I just made this recipe tonight and it was amazing! I have to follow Low-FOD recipes due to my own IBS but I can get away with just a tad of Garlic infused oil. I used that on the Zucchini and ditched the onions and chopped garlic and added minced Ginger with the Zucchini. It worked out perfectly! Thank you so much for this!

Cool tip! Thanks. I usually just keep the onion in the fridge till the last possible moment when it needs to be cut. When it’s cold it doesn’t release the irritating fumes. It also helps to cool the knife.

There's a pretty good hack for potent onions. Pour vinegar onto the chopping board. It's always worked for me. Something about it neutralizes the sting.

I rinse my onions under water before slicing and only trim the root before slicing, nut farther upn plus I wear glasses. I only tear up a couple of times a year and I scratch coom almost everything, so a lot of onions. I wonder if fresher well watered and hence juicer mushroom are more apt to cause a problem. A very sharp knife may cause less problem as a dull knife would crush the onion more. Facing the knife edge toward your face, if you can see the knife's edge it is dull. Quality steel or ceramic (which are cheap by comparision [at least Faberware is, although the handle might not be the best])

This recipe was soooo amazing!!! I didn't have liquid smoke but did everything else, including buying some fresh sourdough from a local bakery.... everything was so good. My boyfriend said I put my foot in it, and it's all because of you. Very warm and very hearty!!! 💜🥰

If you have a wooden cutting board, rub it down with vinegar before cutting onions. It helps!

I've just made this, utterley amazing! Serious depth of flavour. Couldn't find liquid smoke in my local supermarket and so used a smoky BBQ sauce instead. Even roasted my own peppers which almost didn't make it to the pan as they were so tasty - will never buy ready made ones again.

Just made it and omg even my meat loving husband absolutely loved it he wasn't sure what type of meat was in it....lol.....i had to confess to him though there was no meat....he had seconds and thirds i'm going to have to make more next time and maybe put it on rice or some type of grain...but wonderful recipe

With onions, if you don’t cut off the hairy like roots no crying occurs ! Cos nothing is relised ! It works- I’ve never cried since, it could be the other end -I can’t remember but try both ! I swear

Okay team im jumping in. Dont cut the ends of the onions until last. Cutting the ends releases the chemical that causes you to cry.

Hi Rachel, I have a way of cutting onions without crying . Try chewing gum or pretend you're chewing gum while cutting the onion and you won't cry. I can't explain why but it work for me every time. A little hack for cutting onions: drink a little almond milk or dairy milk 5-10 mins before cutting onions. I have done this hack for years, it works for me....it may work for you. 😁
