SOPA DE FIDEO CON POLLO! ❤ easy CHICKEN AND FIDEO SOUP!

This SOPA DE FIDEO CON POLLO takes me way back to my childhood, my momma fixed it often, I remember coming home from school to find my momma waiting for us with this SOPA, she always had something delicious ready and waiting for us, she would make a big pitcher of Kool Aid to go along with it, we were very poor, and it was a very inexpensive dish to fix, but we were blessed to have it as it tastes delicious and is one of my forever favorites. ❤
INGREDIENTS
1/4 C. diced carrots
1/2 small chopped onion
1 celery rib (sliced)
1/3 C. diced green bell pepper
1 1/2 Tbsp tomato paste
1 serrano pepper
1 C. crushed canned tomatoes from my garden (you can use fresh or canned)
1 large russet potato cubed medium
6 oz. fideo
3 med size garlic cloves
1/2 tsp whole cumin
1/2 tsp peppercorns
2 Tbsp chopped cilantro (for last)
3 bone-in chicken legs(with some skin)
3 bone-in chicken thighs (no skin)
Water as needed (I used 5 cups total)
•add 1 Tbsp oil in deep pot
•add chicken and sear 4 minutes
•flip chicken and sear 4 more minutes
•MEANWHILE, grind spices with (1 cup water)
•remove grease and leave 1 Tbsp if alot
•add onions, celery, carrots, and peppers (saute 2-3 minutes)
•add tomatoes and tomato paste saute about 3 more minutes
•add 4 cups hot water and low boil for about 10 minutes
•add potatoes and continue cooking about
15 minutes
MEANWHILE brown fideo in 1 1/2 tsp oil till golden brown
add fideo to soup and cook for 7 minutes and add chopped cilantro and remove from heat
•serve

My people come from Aguascalientes and Monterey and all of the ladies were amazing cooks and we ate a LOT of fideo it was cheap and we never had it with meat and for sure it was never soupy yuck! I enjoy this ladies channel because she is like you were at you tias house because we all have a tia that is the best cook on earth. It is so enlightening to find how diverse our food is. Me, I would sneak next door to my tia Carlotas house for a plate of frijoles de la olla a chunk of raw onion and Serrano peppers with some salt to dip that pepper in but the best part was the flour tortillas made fresh three and four times a day with MANTECA not Crisco. I’m 73 and I would eat a plate of beans and a few flour tortillas right front of my cardiologist right now.Keep up the good work lady.

I just went back in time remembering my childhood with my mother in the kitchen fixing our meals. I was able to smell all the spices in the Fideo con pollo....which was one of our favorite dishes in our home and we had it at least once a week. With fresh made flower tortillas, picante salsa on a side with fresh cold ice limonade. Wow!!...we are 1/ 4 Italian, 1/2 Spanish and the rest Irish and Jewish and my grandparents cooked a mixed of all of them and what it make the food taste better and give it a kick was the Mexican hot spices and flavors of love. I remember asking my grandmother why her food was so tasty and she will say " si cocinas con amor hasta los frijolitos te salen sabrosos " and she was right!! ..my son tells me now the same thing....thanks for your videos Rachel! I forgot about this recipe that is very economical and tasty and I am going to start cooking it for my son and friends...Greetings from Texas....

I found coiled fideo. Aka vermicelli. At save - a - lot. Small pkg. 3/1.00. American beauty yrs ago used to sell the coiled fideo.3 voils in a bag. Could not find that brand again. This store sells the straw like . So if use spaghetti too. I'm trying this looks delicious..!

A true staple dish in our house growing up and is still be prepared and eaten today in our home. These are the recipes my dear amiga to truly take us back home to the our mama's kitchens and the love they poured into their cooking. And that love looks exactly the same as you pour it into everything you prepare so exquisitely.
