Holy smokes! I need a flow chart to figure out which chili is which and all the different names they become depending on their ripeness. As usual, Rachel did an excellent job explaining them all.

Excuse me you do not need a chart. You just buy them, one by one, and cook them, eat them and then you will have to remember that kind, because by then you already had it in your food.

I absolutely love how you explain everything I actually can understand how to cook your recipes I've made 2 of them so far the cinnamon rolls and the enchiladas and both were amazing. I follow you now. There's alot about cooking I don't know. That's why I watch your videos you explain and show how to do it you don't skip through the steps. Another wonderful tutorial. Our Kroger here in Buckeye Country does not carry all these 🌶️ peppers. So I ordered some on the internet. It's empowering to have this information because it makes my cooking life more diverse. Thanks 👍 Rachel. God bless you and your family 💖.

You're welcome, start with Ancho and guajillo and slowly start combining them together, then try others doing the same. Step by step. ❤👍

I am still mad at Texas A&M for breeding a heatless jalapeño. I remember when you could trust a jalapeño, today you never know if it is bland or has heat. Thank you A&M....only an Aggie could come up with a mild jalapeño. ;)

My favorite chilies are jalapeños and poblanos. If I want dried, I use chili ancho. Thank you for showing the differences in all of the Mexican chilies.

I used to go to Carmen restaurant, it has been closed for a while now, and get tostadas that were so delicious! They had shredded beef that was so tender and juicy, and top with dressed lettuce and avocado! I seem to remember refried beans on a crispy corn tortilla. So yummy 😋

Thanks to Rachel. I love her recipes and "tutorials". I make a lot of Mexican food...since I married ONE. My mother-in-law taught me some dishes...but she died some years ago. I consider Rachel...a surrogate...because I didn't take advantage of all the dishes I could have learned and now She is gone. I am "early" retired and have plenty of time to experiment/play/learn about other Mexican dishes...and Rachel is "my girl"...now. She is "the next best" source of recipes. My mother-in-law didn't measure...I DO. I appreciate that Rachel has adapted these videos for those of us who aren't "Mex".😊😊So...bless her...for that, too.💖💖

Since this video is at least a year old I am not sure you will ever see this post. However, I had to say thank you, Rachel for sharing your knowledge about chilies with me. I live in South Carolina now but I am originally from central Ohio. Since the 90’s I have been in love with Mexican cuisine and love to make recipes that are authentic and original to Mexico. Most Americans think that TexMex is real “Mexican” cuisine but I know that this isn’t true. I am so glad to have found this channel and love the way you make a dish seem so simple and easy to follow. Love the videos and can’t wait to see what else you create for your viewers. God bless.

To a person that has not grown up with all these types of chilis, but has learned to love authentic Mexican food, my son-in-law is from Mexico, I’m very grateful for this video. I dig this kind of detail on chili peppers so thank you. It’s only been in the last 2 years I have been cooking with dried chilis. My favorite is chili Colorado.

I love chili's It does get confusing from fresh to dry. I also learned that the dark jalapeños with white lines in them are hotter so I always look for them. Thank you for another great video.💕

About 10 years ago my friends took me to East Los Angeles to eat cemitas where I had chipotle for the first time, and loved the flavor. So, having different chiles growing in my garden, I knew that I wanted to add chipotle plants the next growing season and searched all over for seeds and found none. I found a website of chile growers association in Mexico which gave a history of the chipotle. I was surprised to find that I had been growing them for several years. So, being smart, I just buy them in the can now without all the work involved. I have a lot of Mexican friends, who had to learn from a Gringo where chipotle chiles come from. Ja Ja Ja!

My husband liked to make Serrano Pepper jelly. Kind of a hot sweet but very flavorful jelly. He always grew the jalapeno to make salsa or hot pepper rings. Some of the chilies you showed I knew about, some I didn't. Thank you for showing all the different pepprs

Great presentation, Rachel. I hope you put a copyright on this presentation on the differences in Mexican chiles and how to use them. Best presentation on chiles that I have ever heard. You speak so clearly and sensibly. I just bought a package of Chile pasilla at Los Compadres, a Mexican grocery store in Athens, GA, and you showed me when to use them. I just recently discovered your channel on KZbin, and I have spent many pleasant hours enjoying your videos and slowly I am preparing to cook some of your recipes. The first recipe I will follow is your Caldo de Res with shank steak. I have been fixing this recipe for many, many years but now will follow your steps in the preparation. One thing though that I will not use is corn on the cob although I will use frozen corn kernels. Many years ago, a Puerto Rican friend asked me how she should pick up her piece of corn on the cob in her bowl, and since then, I have added frozen corn kernels which of course add a sweetness to the soup. Thank you for all the work that goes into your videos, dear Rachel. I feel that I am listening to a lovely new friend who has such an enjoyable manner of sharing her many talents. 💘

I love that you made this video. I’ve always wanted this information. Now I can stop asking random people who are speaking Spanish in the grocery store. I would ask if you would add the written names so I can identify the peppers more easily. Thank you for all the recipes you have shared.

Rachael, thank you so much for this tutorial. I will be more confident now shopping for fresh and dried peppers at my local Latin store. I do have a question, however. Can you explain why some dried peppers are first dry toasted in a skillet before being rehydrated or ground while others are not?

Concentran mejor el sabor , potencializa su sabor¡¡ en algunas veces quita lo amargo de los pimientos el calor del sarten. Tambien depende de la receta que vas a cocinar a veces no es necesario tostar en el sarten y solo hervirlos en agua.

They don't have to be toasted before hydrating, I do it sometimes depending on the chiles or if i have something else to hydrate, but I think they're delicious either way.❤

Thank you SO much for this! I look at all the different chilis, fresh and dried in packages, and I'm just lost, but they all look and smell wonderful. But I don't have a clue what to use for what.
