Rachel, I live in a high altitude, I used to live at sea level, and cooking and baking are a whole different animal 😂 Years ago my mom found a recipe where you bake the rice! This is the only way I can cook rice at my altitude and it turns out beautifully each time! When I moved to Colorado in 2017, I had to learn how to cook and bake at altitude, baking cakes used to be my thing, but not anymore! I’m still learning how to bake and it’s getting easier now, but I cried a lot when things didn’t come out right! Rice is one of my favorite things and I have mastered it at altitude 😊

We use a 2 quart Revere Ware copper bottom pan we’ve had for 52 years. It never fails make perfect rice. We’re having some tonight with lentils.

Took me 70 years to figure this out, but your simple technique does work well. I use non-stick, even proportions of rice/water, 20 min on the burner/simmer, and 10-15 min rest time. The biggest problem I used to have was rice burning or sticking badly to the pan. Pulling it off early letting the steam finish the cooking solves that problem.

Thank you for your wonderful videos. I've made so many of your recipes successfully. My mother taught me to bring about 4-5 cups of water to a boil add salt & 1 cup of rice. Lower heat & boil 15 minutes. Taste test some grains for doneness. When done to your liking strain & add a little butter & fluff with a fork. (Or don't add butter if saving rice to make Chinese fried rice) Saw this tecnique on Food Network a few years ago & the chef said it was a French technique.? Anyway it has worked for me for 50+ years.

I stumbled on your channel when looking for a Chorizo recipe (I now have 3 pounds of your Chorizo in my freezer). I was having problems with my rice and followed your instructions and I now have perfect rice (your White - Mexican and anything with rice in it has turned out perfect). I grew up living with my aunt and uncle when I was young (my uncle was from Monterey, Mexico). He loved to cook, but was never one to write down a recipe (he passed away many years ago). I also love to cook and have had to make up so many meals I could remember from him, but they never turned out like his. Your recipes have have brought back the taste - flavors and textures from my youth. Your recipes have never failed to come out perfect every time (I just made your apple fritters they other day **perfect**). I just wanted to say your recipes are easy to follow and taste delicious. Hi Rachel. I just made your white rice in the frying pan. It turned out fantastic. I'm so happy and I thank you so much. I will be serving it with your Chili verde with Potatoes which is cooked yesterday. It's definitely a labor of love because the prep is time consuming. But it turned out incredible ( except a bit salty). I think it was that tablespoon of kosher salt. The meat was so tender and oh it was spicy so I will cut the Serrano peppers down to one next time. Rachel you're a phenomenal cook and I'm so grateful you are willing to teach us all. Thank you so much ♥️

@@barbarasue7191 I was trying to figure out how to show you a picture of the bottle...anyway...it's a sauce that's somewhat like soy sauce in look and texture, but not in taste, as there is no soy in it at all. It can be used in gravy, soup, stew, and I love it in rice. It's not as sharp tasting like soy sauce. You should be able to find it in the supermarket. However, I order mine from Amazon, and I get the original bottle that comes from Germany. Simply type in Maggi. Look for a brown glass bottle with a red cap and a yellow label with a red border and red lettering. It will always be your "secret" ingredient!

Being part Asian, I have a pot for cooking rice I inherited from my mom and my siblings and I fought over it. I'm the oldest, so I got it. Our family rinsed the rice not only to get the starch out, but to remove arsenic. One cup of rice, add water, stick your index finger above the rice and add water until it reaches 3/4 of the way to the first line of your finger. Boil on high until half the water is gone. Lower heat to low when it stops boiling, cover tightly and cook for 20 minutes. I tell people not to buy a rice cooker because it is a waste of money and it's just another appliance in the way. No matter how you cook it, all that matters is that it turns out great like yours 😊😊. My mom use to sometimes overcook it because she liked a crispy bottom and my grandfather would take rice when it cooled down and make rice balls and sprinkle salt on them for us kids when we were little 😊😊😊😊

Once you have the measurements and the time right - like your recipe, you never have to deal with burnt or hard rice again. For more people just double the recipe. I did everything the same as you do except for the timing, I was going 20 minutes cook time. But, I'm going to try your method of 14 minutes tomorrow. Thanks, Rachel.

Hola señora Rachel, I’m new to your channel and I’m so glad I found you, I’ve been binge watching your videos all night, there’s little details in your cooking that i can relate to as I myself do them too and that’s how I knew you were legit (besides the large amount of positive comments to your recipes) although I’m no pro or anywhere as good of a cook as you but with time and your recipes I know I’ll improve. Recién me junté and I started off with affordable cookware sets that aren’t the best of quality, as I watch your videos not only am I impressed with your recipes and teaching techniques, I’m also impressed with with your cookware, if possible can you make a video of your cookware and the brands? Or with a simple reply to my comment I’d be more than happy. I think it’s about that time I start investing in some quality cookware and I’m super impressed with the ones you use. With that being said, thank you for sharing all these amazing recipes and being the wonderful, beautiful woman that you are ❤
