BRINE
5 1/2 pnd organic chicken
1/2 cup Kosher salt or sea salt
1/2 cup honey
1 tsp onion powder
1 tsp garlic powder
1 Tbsp whole peppercorns or crushed
3 bay leaves
3 sprigs fresh thyme
3 sprigs rosemary
1/4 sliced onion
1 whole lemon sliced
1 small bunch fresh Italian parsley
10 cups hot water
Simmer on medium 5-10 minutes
THEN let sit and cool completely.
SEASONING
2 tsp smoked paprika
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1/2 tsp rubbed sage
Salt and pepper to your liking
6 Tbsp soft butter...(before adding butter seperate some to sprinkle all over after rub.
Mix together and rub

I love how you say “my Ron” my late husbands name was jimmy and I always called him my Jimmy! He would have loved your videos. You cook with so much love and care. My jimmy loved to cook. He was blind and used all his other senses to help him cook like nobody’s business!!! When he made eggplant parm he would know exactly when do you turn the slices of eggplant frying in the pan just by hearing when they released their oils! Cooking is the universal language, and even the blind can do it! My Jimmy, proved that! ❤

My boys are not a fan of turkey so I found and used your recipe and brined a roasting chicken for Thanksgiving. It was by far the best chicken I have ever made. My whole family loved it and I will never bake another chicken without the brine again! Looking forward to more of your recipes. Thank you!

I made this tonight as a practice piece for Thanksgiving. No one really likes turkey, so I want to make a roasted chicken. I stuffed this and cooked it for about another 30 minutes. It was absolutely delicious! I’ll be making chicken noodle soup with the carcass tomorrow! Your recipes are always a hit! So easy and delicious every time! 🥰🍁🦃

This entire meal looks DELICIOUS! Thank you! How can I be this old and never have known how to brine? Rachel, i am learning so much from you and thank you very much for your lovely and detailed way of cooking! I am a new viewer in the past two weeks and from now on! From this video alone, I saw how to infuse flavors through the seasonings I have on hand, how to brine, how to cut into a whole chicken the easiest way, etc. I am a homebound senior who cooks ALL my own meals always looking for new ways to make ordinary food tastes spectacular. You are my answer and are doing that for me. God bless you for making these videos; I will be watching! ❤🙂

You cook real food for real people and explain everything so clearly. Your enthusiasm and love for cooking really shines through on all of your videos. I'm 64 this yr. Never brined. I have always put my seasoned butter under the skin though. I love that I learn something new everyday! I like using apple juice in place of water. I make a really yummy green apple stuffing. Can't wait to brine going forward. Thanksgiving is going to be so good. Thank you Miss Rachel for my something new for today!

Fresh baked Cubed bread of your choice season it yourself using some parsley, sage rosemary & thyme salt & pepper 2 large Green apples peeled Celery Onion Parsley Sage Rosemary Thyme Salt & pepper to taste Apple cider to moisten Measurements depend on the size of the beast. I use a large sauce pan Soften (but not too soft) the onions, celery and apples Add the bread cubes. Season the mixture with the parsley, sage, rosemary, thyme, salt & pepper to taste add the cider. I don't use too much about a cup maybe less cause I don't like it mushy. Put the stuffing in both sides of the turkey. I also use apple cider to the bottom of the roasting pan instead of broth. The juice from the turkey blends nicely and makes a great gravy! Let me know if I need to be more specific I use the palm of my hand in small amounts on the spices cause you can always add more. I hope this makes sense I'm an eyeball kind of cook.

Started yesterday with the brining and made this for Sunday dinner. Winner!!!! Technique and recipe produced a crispy dark golden brown bird with flavor to spare! Thank you so much Rachael - I love the looks, taste and moisture of the finished chicken. You are so right - much better than store bought and my gravy with the drippings also was a winner. You are the cook and just a fantastic teacher!

Ok Rachel, you had me at chicken, brine and then I saw your 4 quart RevereWare. I have a collection of vintage RevereWare (most inherited from moms that their kids didn’t want old pots and pans). If someone reads my comment I am just telling you the handles don’t like a dishwasher. They fade. There used to be a dealer on eBay that would restore the handles but no more. Irregardless, the cookware stands the test of time. Pre WW2 RevereWare will have a Patent Pending circular mark. It has more copper. During WW2 metal was sacrificed for the war effort, so the copper thickness was changed. Still, RevereWare was supreme quality. Many homes keep their cookware still. The reason I know this is because I like to research my home cookware. My kitchen is the heart of my home. I love to see a loving cooks kitchen too. I’m nosy that way. Rachel I really like to see how you use cookware as well as advise cooking skill. I learned to cook being in many of my mothers friends kitchens and I love detail. You show delicious and affordable meals. Thank you so much for your channel!

My son learned to brine from his Vermont FIL. It made the chicken fabulous. He even does a simple brine 1/2 C of brown sugar to 1/2 Cup of kosher salt to quart of water in cool water after dissolved salt/sugar for about 2 hours and grills the chicken. It really makes a difference for grilled chicken as well. I love the added spices and lemon in the brine.

It's 15 past 16 hrs. I really appreciated your way of marinating the chicken in brine for almost 18 hrs. You prepared it with much love. I believe the secret behind this recipe is the long hrs marination in the brine to give tenderness and taste . The alumunium foil also plays an important role in giving the chicken its texture &colour. Thanks very much for sharing Lady.

Hi Rachel! Just a little cute metaphor; You treated that chicken as if it was your own baby! You bathed it really well, you patted it dry so tenderly, you gently rubbed lotion (butter ingredients) all over it's tender body and skin, you covered it with love, and then put it in a warm very place. My family’s favorite coating: 2 T melted butter, 1/4 cup Parmesan cheese, pepper to taste. I used this on whole chicken and pieces. Sometimes, mixing in pankow crumbs. Crunchy and delicious!

I brined my Turkey breast with this, added garlic cloves and fresh and powdered sage and some poultry seasoning from a local health food store. I didn’t rinse.. and I left the lemons, onions and the other yummies into the cavity. In the morning, I used that brine juice in my stuffing. I baked the breast buttered and seasoned on top of the stuffing like my Mom and Granny always did. Used my thermometer to check the Turkey and the stuffing. It was so good! We all loved it! Hope your Christmas was wonderful. Looking forward to trying new things next year.

Now, don't get me wrong, I have roasted chicken before, but this recipe was definitely different! Only one problem you can fix for me, and for many others I'm sure. How do you make your brown gravy to go with the roasted chicken??! 🤔🤔 Thanks for sharing.

I've always been of the opinion that when baking a chicken it HAS to be stuffed. Over the years I've found that the best way to moisten the stuffing is white wine. It will steam into the meat. No alcohol when fully cooked. There is something about the combination of wine, lemon, and roasted butter on chicken that is delicious. And the pan drippings into a gravy for stuffing makes a delicious meal.

It’s lovely that you do all the varieties of meals with the beautiful presentation. It’s nice for us but we did these things for our families,not all families are so fortunate. The children have parents that would like to do these meals but moms and dads have to work so much there is little time left or energy. These things were what we were used to and we wish children didn’t have to think about what or if they were going to eat for dinner. Your helping to mold children into the adults they will be one day. Your giving them skills they can pass on to their children. I have four sons and they are excellent cooks ,really, as good as I was but I’m in my seventies now and not well enough to cook all those big meals which were on the table every night. Thank goodness I was lucky enough to have a husband that insisted that good food was as important as a roof over their head. We did without a lot but clean ,neat home and good food was always at the top of the list. Thank you again .

Rachel, YOU are the BEST teacher of cooking! Anyone can cook with a camera filming them but not everyone can teach. Instructing in a slow enough pace so everyone can follow. I so appreciate all of your time. As I have said before, I wish I had learned from you earlier in my life when I was in better physical shape and when more of my family was alive to eat it. As easy as you make things look and as much joy as I get from feeding my husband, I am still going to try this and some of your other things. We love Mexican food so much too so now that it’s winter, casseroles and roasted chicken seem just right! So happy I stumbled upon your channel. I will share some of your videos on Facebook. Miss. Rachel, I used your recipe and technique for brined Roasted Chicken last year and have decided to do this each time I plan on having a Roasted Chicken dinner because of how delicious this is and how pretty it turns out. TY

I noticed at the top that this video first occured 2 years ago, but I'm viewing today, 12/15/22, and I couldn't have found it at better time! I have everything except the rosemary, thyme, and the whole peppercorns....but I have ground black pepper, bay leaves, sage, etc. ALL the remaining ingredients, so I'm going for it. I'm a senior living alone, but there's a pair of brothers in my bldg, away from their Mom's home cooking in Mississippi, and they help me out a lot...carrying heavy, things, driving me around, helping with stairs, etc, so I want to make a nice Christmas dinner for all of us...because God is Good. I'll probably comment on Christmas Eve....let you know how it came out. You're such a blessing. Thanks

Rachel, I used your brine recipe for my Thanksgiving turkey, and everyone loved the results. The turkey was juicy, tender and so delicious. My daughter said it was the best turkey I have ever made, and I have to agree. The spices made such an aroma, we were all anxious to try the newly brined turkey. I will certainly try this recipe again. Thank you so much for your delightful recipes and the manner in which you teach us.

Lady Rachel, you are a cooking genius, you are so sweet and watching you brings back memories of my Mom. She passed in 2007, a princess of a lady, to this day I miss her so. God bless you and what you do for all of us demonstrating different ways to cook. I will do this next time I roast a chicken. Guarantee... going to do the brine.

Brining makes the chicken very tasty and juicy. I brine my pork also. I made SOUTHERN FRIED CHICKEN two days ago, I brined my chicken parts for 8 hrs, I brine them for 24 if time allows. My fried chicken was juicy.

That's one beautifully roasted chicken better than any grocery store one. What a wonderful brine to try and just love how you make it look so easy my amiga. This is definitely a must try recipe. I cannot wait to make this, I made your famous pot roast yesterday for hubs and me. All I can say is wow! Seasoning it, flouring, searing then cooking it first with all wonderful spices and veggies it was out of this world good. Easiest gravy recipe ever! Thank you so very much beautiful lady! Oh! My gosh! How can this fail? That brim is so filled with flavor, it can't fail! ... New to me but it's a must try! LOL! All the seasonings are favorites. My mouth is watering as you cut into this bird! Now, that's a meal for the week for at least two or more using different parts of this beautiful chicken. Thank you, thank you for this recipe! Rachael we have a very well known celebrity cook over here, she is called Nigella Lawson. She shows as all how to brine our turkeys for Christmas Dinner.She's the only one I've seen do it. I've not tried it yet but I think I might after watching you do your scrumptious chicken.

I have tried so maybe recipes and they've all been great but I have a new chicken in there and I just started my first brine at 55 Iona rotisserie it's still not the same as the store thank you so much and God bless you you're Ron and your whole family

Wow! I just buy a chicken, season it and roast. Not anymore! I got to thinking about what it means when its organic. I have to try brining and roasting an organic chicken! My mouth was watering watching you eat that chicken!!

Your funny my friend, I like chickens that roam free and are not injected with hormones, this brine and roast chicken is very simple into make, the brine takes minutes, then it sits in the fridge all night then roast the next day...super tender and juicy, you'll never have it any other way, thank you my friend. ❤⚘
