Hi! I think you're referring to future tense sentences. When talking about the future, "going to" is usually used for plans that are decided already. "Want" is used to express a desire to do something, but not necessarily a plan.

Thanks for the lesson! I noticed a slight flap T in the very beginning of the vídeo, linking 'What' to 'did'. It was not mentioned in the IPA transcription. Is the flap T there?

For this "what did you", the "did" is linked to "you" with a reduction, so it sounds like "dju". It may be that you're hearing the D sound at the beginning of "did" here, since the T from "what" is dropped for smoothness. So it'll sound like [wʌ‿dʒu].

You said that we pronounce the t sound in the middle as a stop t which is almost heard as d sound in this cluster. Is it correct what I've understood ? Next in this word "ostrich" should I say the /t / sound as ch since it's followed by r ?? Thank you so much in a advance.

I have never been able to listen to ups and downs of English tones. It feels weird to listen to english language with accent and ups and downs of sounds in this language. The reason is my language don't have ups and downs of sounds. Like many syllabus are ups and downs in your English language.
