Toffee- start with a caramel base, sugar with a little less than half as much water, until it melts and begins to turn gold (start about 3 minutes before the butter. (Brush sides with water if it starts sticking and crystalizing above the bubbles). In a separate pan, brown the butter as normal. When they are both ready, pour them together off heat. And whisk until they begin to thicken. Then pour wherever you need it.

Yeah I've never had good luck with caramel starting with the fat in. Caramelize your sugar (you can start with just sugar but I prefer the wet-sand method the person above mentions, you don't have to measure the water because the sugar won't caramelize until all of the water has evaporated anyways (so less water will go quicker, the water is just there to make it easier to heat everything evenly without burning spots), stir slowly with a spoon until get it where you like, then add fat (butter/cream) and it'll bubble up like crazy and THAT'S when you whisk.

@@bsidethebox the problem is a lot of "butters" have water in them and water at the stage of adding the fat with your sugars (or any time after) causes the sugars to seize up. That's why browning them separately first works - the water has been removed before combining them. Also if too thick don't add water add oil or it will seize up.

@@rhondaflesher8313 Not as I understand it. There are plenty of caramel/toffee recipes that start with water, fat, and sugar--even in my pastry school textbook! I just think they're much more finicky and frustrating, especially if you haven't had a lot of practice with cooking sugar. The issue with splitting caramels (where you end up with chunky, grainy sugar clumps in a greasy soup) is that sugar and butter (and other fats) melt (and burn!) at very different temperatures. So you can have all your butter melted while your sugar is still in crystals. You can still get a good caramel/toffee by SLOWLY cooking the mass while constantly stirring to avoid hot spots (wash down sides as usual) until the sugar starts to melt and then mixing more vigorously to bring them back together (probably why the recipe she was using instructed her to whisk at the end). Adding a bit of water can help, too. Of course, your butter/fat/cream can burn if it heats too high so getting impatient and turning the heat up high or walking away for a bit is way more risky. 😣 (Splitting can also occur when you melt or cool completed caramel too quickly; try adding a bit of water and reheating slowwwwwly) In my opinion, it's much easier to add your fat at the end of caramelizing the sugar. You can walk/look away from it at the beginning, you don't have to stir it nearly as much, and it's much easier to control the color of your caramel (one of the hardest parts of caramel making for beginners is knowing when to stop cooking it, in part because the residual heat from the pan will continue to cook it for a bit--adding the butter/cream at the end actually helps cool off the mixture a bit so you can control the color/flavor a bit better.) Maybe there are some advantages to doing it all at the beginning, but I personally haven't found one.

To be fair, smell is half the taste with just about anything. They've done studies with a bunch of different foods and if you plug your nose, you just get the sweet/salty/savoryness that your tongue automatically separates. It's weird but try it!

I think taste buds in your mouth detect taste (salty, bitter etc) and the nose detects flavor, there's a difference. I'm surprised Rachel and Chris don't know that, I thought it was common knowledge

Yea, this is why we can't taste much when we have a cold or flu.I also am surprised that they didn't know this, only because they seem like they would know a lot about food science. I kinda assumed it was common knowledge but I for sure am a science geek and know tons of random facts that I always think everyone knows but at some point I realize a lot of people don't care about the weird crap I think is interesting lol. Either way these videos are always fun to watch!

Loving your look today! Also, this channel is one of my top favorites!! I absolutely love the vibe and I always get so excited when I see it pop up in my notifications. Also, thanks for opening up on your other channel and know that we are all rooting for you and your mental health and praying for your little chunk to have a easy surgery and a quick recovery. It always seems like it is so much harder for moms to watch their child go through anything painful. I always hate when my babies get hurt or are sick and I have no control over it. The first recipe reminds me of "Christmas Crack", which uses saltine crackers instead of chips. I add peanut butter to mine and it tastes magical! Instead of adding chocolate chips on top, I totally thought you were going to add mini sized chocolate bars and melt them down in the overn! That, or M&MS, would have been so yummy!

I’m from Pennsylvania, USA, & snack bags of chips, cheese balls, and pretzels are a staple for trick or treating. This is the first time I’ve actually heard it happening somewhere else! It’s always a nice ~palate cleanser~ in between the candy lol

yes,my aunt makes this on Christmas with saltines and she calls it crack candy or something like that. she actually says it is super easy to make and she uses a crockpot. all I know is its freaking delicious!

Plugging your nose stops your sense of taste when eating, so you may just be stopping your taste aswell when you eat those skittles. That's why when something tastes bad you eat it plugging your nose!

I've lived in California, Nevada and Montana, and I have NEVER ONCE gotten a bag of chips for Halloween, and neither have my kids. By the way, I still love plain potato chips, even with all the other fancy flavors!!

Hi Rachel, love you ! I’m a pastry chef and simple fix for this and any future caramels, the recipe method was wrong, not you hunny. Make a dry caramel and then when you’ve achieved the colour you want add butter and whisk. This allows the butter fats to properly emulsify into the sugar without the milk fats separating, this will give you a beautiful silky caramel. Hope you see this and it helps ❤️

What is this “leftover candy” you speak of? Rachel, I was with you regarding grape being the grossest flavor - but you lost me with the candy corn, that stuff is just nasty. BTW, did you know the candy corn is designed to stack up and look like a cob of corn? Talk about mind blown 🤯. Love you guys.

i always got my halloween candy to myself as a kid, it was a free for all but i still always had candy by the next halloween, honestly i think that it helps kids with control when they are given it, bc if they don't get a chance at having control themselves they never learn, and i'm not trying to be rude in any way or say anything about your parenting bc i think that your an amazing mom, but i just wanted to put this out there, sending love to you and your family❤

It's really fun to watch you experiment with all the recipes you find. I had to cut out a lot of experimenting, baking and other cooking for health reasons. It would be really interesting to see the effects the recipes you find have on your blood sugar using a continuous glucose monitor (if you can get them where you are).

For the record, bagged milk is not a thing in all provinces in Canada. I grew up in Newfoundland and milk came in 2L cartons. Bags are just weird.

Here in North America we can’t do that because the eggs aren’t safe when they’re raw. But many of us are known to ignore that, myself included. 😂 IMO people need to be more worried about e. coli from raw flour.

@@jessicas253 yeah. I’m certified in food sanitation and safety. E. coli in flour is pretty common. I say this as someone who did and still does consume cookie doughs and batters. 😂 I just bake the flour first now that I know.

I've never heard of getting chips when trick or treating. Anyways, this year my kids are being given their buckets full of candy and then watching Buffy (the movie).

With the Toffee, maybe it's like when you make caramel? With that you need to wash the sides of the pan with a pastry brush dipped in water so the sugar doesn't crystallise and ruin the batch.

I love that you’re doing a scavenger hunt for Halloween. As kids we always did a big scavenger hunt on Easter and it was my favorite. One of the first things we would find would be a new cute dress outfit for church and there would be candy hidden and the final prize would be some kind of fun toy item. I miss doing those. Definitely going to have to do that for my niece since I don’t have kids of my own.

I love this editing and that colour of sweater on you. For Halloween this year we made little baggies and set up a table with them at the end of our drive- we had more kids than ever before! It was nice to be able to see them from a safe distance.

But smell and taste are connected 😅 As a person who had Covid-19 and lost her sense of smell completely for two weeks I have to say that all you can taste is sour/sweet/bitter/salty. It was sooooo extremely boring to eat anything 😟🥺 Just imagine how sad it is to see cinnamon rolls you just made and not be able to smell it 😭

Yeah, definitely thankful I didn’t lose my smell/taste like my mom when we got covid... she STILL can’t fully taste or smell stuff and that was 1-2 months ago

It don't remember what they're called but there is a type of cookie that has all kinds of stuff in them like chocolate and I think like caramel or peanut butter chips and the potato chips. I hear they're amazing because of just the mix of texture and flavors in them

I live in the US, and I’m sure you know how we are handling COVID. For Halloween this year we are going to hit up houses of friends and family that we know have quarantined and walk around our neighborhood and look at the houses that have decorated. It’s my sons first year being able to trick or treat so I want it to be as “normal” as possible for him.

Hi Rachel and Chris! I learned in school that your sense of smell and taste are connected and interdependent. We learned this by doing an experiment with starburst. Ever wonder why food doesn’t have much taste when you have a cold? Love watching your videos!

Nothing. Since in my country (Slovakia) we usually visit the graves, but this year they are closed. Our prime minister had a "good" idea of the whole country getting tested, voluntary. "Voluntary" as in if we dont get tested we stay in a 10 day quarantine as if we were positive. We get a certificate that we are not positive, they wont even let us buy groceries.
