My Father was from Bologna and I lived there many years. Eva's recipe is the real deal and you can use the same sauce for a nice lasagna too. Kudos for Harper speaking Italian.

I've been told Bolognese recipes change in Italy from households to households. I make it from a Jeff Smith recipe, sort of fashioned in my own way. sauce meat, beef and pork seared, pan glazed with red wine, cooked low and slow for 3 hours. meat removed. Add heavy cream and a handful of Lucatelli. Done. Over pappardelle.

The smell of this ragú is one of my first childhood memories, sitting in the kitchen while my mother was preparing it. It's a beautiful story: my mother got very good grades at high school, and rewarded her self with a trip to Italy. A charter trip to Rimini, I believe, that's what she could afford. Italian food has stayed with her ever since. Did she make egg fresh tagliatelle? Did we even get proper parmigiana in Norway in 1971? No and no. She still made a very good ragú, and every time I make ragú bolognese, I think of those moments with my mother in the kitchen.

Finally made this! I left it to cook for 4 hours as I learnt that the longer it cooks the better. I also put a bit of milk near the end (I saw it was the traditional thing to do). Long story short, it was amazing! I couldn't speak, just eat eat eat :p

Agree, my research across a variety of traditional sources (sauces!) calls for a dash of milk and I have found this helps the emulsification of the fat into the ragu.

@@PastaGrammar haha you can always try making some at home! Get the dried legumes/spices(they store well) and just use regular vegetables you have at home to make a dish 😊. Start with something simple like 'dosa' only takes rice, one legume and some fermentation. 😁 Indian food is easy to make for people who love to cook their food like Eva !!

KomalJi I have to order the spices on line and it’s expensive. So I go to a big city about every 6 months for Indian and Asian (Chinese/Japanese), and middle eastern ingredients from the individual grocery stores for each nationality. It is 6 hours one way though 😭

I made this. I totally made this and my kids, for the first time ever, ate ALL the beef on their plate. and get this... they asked for MORE! then! THEN!!! this morning my 5 year old son, wanting breakfast, asked if there was any leftover bolognese. THIS HAS LITERALLY NEVER HAPPENED! harper and eva, you're doing god's work, spreading the knowledge of proper italian cuisine. i have spent the last eight years of my adult life trying to google the food my nonna (by marriage) used to make when i was a child. in my adventures, i have learned to make a proper pizza dough, a good ragu, and even noodles. but... had your channel existed eight years ago, i could have learned ALL OF THAT in one good binge session. y'all are outstanding!

To all friends who are not Italians, surely Eva is right to suggest homemade tagliatelle to accompany the Bolognese sauce, but who does not want to prepare pasta or who like me considers egg pasta a little too heavy I suggest some dry pasta that goes well with Bolognese sauce, if you find them I would use "paccheri", if you can't find them you can also fall back on common "tortiglioni" or "mezze maniche". Obviously these are personal tastes, but I think I have given you a good suggestion.

Eva, you should have said that with ragù is also acceptable to use dried egg tagliatelle. Few home-cookers in Italy actually prepare hand made egg pasta every day. There are excellent brands of dried egg pasta in our supermarkets that I'm sure are available also in US.

Finally... The real recipe for bolognese saus!!! (the dutch put a lot of vegetable-soup veggies and herbs in it, and serve it with spaghetti) I will try this at home.

Spagetthi is overrated. The best kind of noodles are the small ones. Easy to pick them up and they can carry alot of sauce.

hans Haperle pasta is pasta and noodles are noodles - in the modern world outside of America the words are not synonymous - but regardless if you made spaghetti super thin then it would end up feeling like you’re eating grass

da nord a sud, est a ovest, tra regioni e provincie, l'Italia ha una cuisine molto varia. Pesce carne, verdure. legumi etc etc. Questo è il motivo per cui, senza dubbio, è il migliore del mondo. Hands down!!! From north to south, east to west, between regions and provinces, Italy has a very varied cuisine. It is for this reason, without any doubt, that it is the best in the world.
