Hi Ellise, I just love all of your creations. I just wanted to add a little tip for those left over brownie pieces. This is something I do and everyone loves it. I take the pieces and roll them into balls or some other shape and either freeze or refrigerate them. Then I will melt some chocolate or candy melts and dip a stick in the melted mixture and into the balls. Back in the frig to set and then back out and dip the entire ball in chocolate and then I add sprinkles. Basically I make a cake pop out of the left overs. You can make the cake pops into a heart shape too. These are great and taste like a truffle, YUM! Sometimes I will even add a rum or a liquor for an adult version, like a rum ball. Do you use plain flour or self raising because if you use plain flour you will need to add bicarbonate of soda other wise it won't rise and cook properly(if you're from America it's baking soda)

Try cooking them a bit longer at a lower temperature, also put the mix in a smaller pan so that you have a thicker layer.
