Your "what I eat" videos never fail to inspire me to incorporate more plant-based meals into my diet. And your meal prep strategy is such a game changer! I'm also absolutely LOVING roasted koginut squash. I'd never heard of it before, but I believe it's a hybrid of a kobocha squash and a butternut squash - it's got a creamy mouth feel and it has notes of maple syrup. Love!!

I received your book a few weeks ago and started reading the flavor addition sections. While I am trying to eat simply, it doesn't need to be bland. Your "cesar" dressing was a game changer for me! I am obsessed with the flavor. Admittedly, I didn't have a couple of the ingredients so I had to replace a little (example: used a few drops liquid smoke instead of worcestershire, and I only had those snack packs of seaweed but they worked great) I have had this on MANY different foods.

Hello. I am new to your channel and wanted to say thank you for the inspiration. Everything looks so good! I am currently transitioning into a whole food plant based diet. My fall favourits right now are definitely pumpkin and sweet potatoe dishes. I really really love brown round grain rice - I cook it and then roast it with some coconut oil and add roasted mushrooms and topped with coconut flakes and some sea salt. I add a salat. It is a simple dish, but I love it very much. Your place looks really beautiful. Greetings from Germany
