Your "what I eat" videos never fail to inspire me to incorporate more plant-based meals into my diet. And your meal prep strategy is such a game changer! I'm also absolutely LOVING roasted koginut squash. I'd never heard of it before, but I believe it's a hybrid of a kobocha squash and a butternut squash - it's got a creamy mouth feel and it has notes of maple syrup. Love!!

I loved this video! My partner and I made the recipes at the beginning and a squash soup this week. For dinner tonight we gave my kids a soup with the nut mix and toast with the spread, the kale that we’ve made with you before, and the balsamic. We eat it while watching you talk about it! I know, bad, parenting, eating with a screen on. I think your description really helped my kids eat every last morsel of the food. Thank you so much.

I am not vegan and love a salad. I literally eat one everyday for lunch. The harvest salad looks amazing. You could do so many combinations with dried fruit, nuts, and fresh fruit. I think maple glazed delicata squash would be a yummy addition.

I watched this video last week and immediately ordered your cookbook! I absolutely love it! I've already made the whipped tofu (delicious!), the roasted nuts and seeds, and the pickled radishes. I also decided to give your weekly meal plan service a try and just made my first meal and it was amazing as well. All the information on prepping foods for the week, storing everything, preventing waste, using the foods in different ways,, it was exactly what i needed. I'm so happy i discovered these and will definitely be resubscribing!!

I'm in the UK, but subscribe to your channel. Your recipes are great, and I love your easy and fun presentation style. I do appreciate there will be a lot of editing and post-processing to produce such a professional end product, but I also love that you leave in some of the things that don't quite go right - it adds a bit of fun, and for me, makes me want to watch more 👍🏻

12:02 Your ”fall” seems really nice! Here in Sweden it’s completely dark outside majority of the day, you only see the sun for a few hours and it’s around 5 degrees Celsius 😅 The recipes look amazing, I’m always inspired by your videos, especially the quick condiments! Hello. I am new to your channel and wanted to say thank you for the inspiration. Everything looks so good! I am currently transitioning into a whole food plant based diet. My fall favourits right now are definitely pumpkin and sweet potatoe dishes. I really really love brown round grain rice - I cook it and then roast it with some coconut oil and add roasted mushrooms and topped with coconut flakes and some sea salt. I add a salat. It is a simple dish, but I love it very much. Your place looks really beautiful. Greetings from Germany

I love these videos as they inspire me so much! I feel like I never know what to do properly with my leftovers except "reheat and have the same again" and I loved how you incorporated your leftovers into whole new meals. I have to admit I wasn't overwhelmed with the squash and lentils but after watching the whole video I'd be open to try it! 😅

I recommend using fork to remove the seeds from butternut squash. You get clean seeds this way.

I received your book a few weeks ago and started reading the flavor addition sections. While I am trying to eat simply, it doesn't need to be bland. Your "cesar" dressing was a game changer for me! I am obsessed with the flavor. Admittedly, I didn't have a couple of the ingredients so I had to replace a little (example: used a few drops liquid smoke instead of worcestershire, and I only had those snack packs of seaweed but they worked great) I have had this on MANY different foods.

I listened to a lot of your videos and I never made one of your recipes, But this one might change that, this one is an 11 over 10 !! You are one of my favorite vegan YT , I like how you use ingredients that are not transformed, I am not into beyond beef products. And you always add a large amount of healthy greens. Frankly, your cooking cannot be healthier ! It is perfect, I will view this video several times and they at least one recipe ! Thanks

These are my favourite videos that you do!! I think this will be my base for meals for weeks on end because everything looks so yummy. I make homemade sourdough bread and tortillas, which will go so well with this meal prep. I live in a very small town in Canada, very rural and remote. One of the things I appreciate about your recipes is that I can easily find the ingredients here, or adapt easily if I have to.
