My buddies Pat and Tim visited the farm to help build a meat smoker. I play the part of the welder, Tim is the electronics whiz, and Pat is the smoke master. We wanted to use a vertical design, thinking it'll take up less room when it's being stored, and Tim had some ideas of how to use a programmable fan to control the temperature of the fire. Tim also had the idea of using a boat horn as an alarm to alert/wake up the smoke master (pat) if the fire gets too hot or when the meat reaches the programmed temperature. Once we finished building the smoker, we fired it up and got two briskets smoking for the big Halloween party we were having in the barn.

just seen this video and got to say that your craftsmanship on this smoker was excellent ! I like the design with the vents going from bottom firebox to the top. You guys put together a piece of art. I BBQ all the time and If I seen that smoker you build in a store, I would have bought it. very nice. That smoker was built from the heart and sole. Great Job!!

Any of the days that end in Y Are the days I used to say were good for smoking meat. Do you really think you need a holiday for it? That brisket as well as the smoker are beautiful!!! You ought to be proud of yourselves for an exceptional job on both!!!

In Texas it not uncommon to cook a mix of meats that way just keep the chicken on the bottom rack. You can hang a lot of sausage in that thing. I wonder if you could crack up the fan keeping a low really low heat and make jerky. True jerky is made with almost no heat.

Just found your channel today. This was the first vid I watched. Went right into your 4 part chandelier series. EXCELLENT work. That is a great looking smoker! For as much bending of metal as you do, you should really look into Swag Off Road finger brake kit to fit into a shop press. They are pretty easy to build and are very useful. I have had mine for several years and it has really enhanced my metal work projects for the farm.

Just throwing this out there. Vinegar or muriatic acid are great at removing galvanizing. As I’m sure you know, welding galvanized parts are a no no. Happy fabricating!

Man I am glad I found this channel, I'm hooked! My old man passed away this last year and left behind a huge shop (previous horse riding arena) and a ton of tools. They are completely unorganized and buried with cars, and a lot of junk. I sure hope to get the shop to the point you have yours. I'm a mechanical engineer and did fabrication in college working nights...can't wait to get back to welding. This is getting me excited. Nice work!

First time viewer. Love the smoker. One of my fondest memories was my Grandpa built a smoker. In it was bacon, hams, turkey and a couple pheasants. Don't even see many pheasants anymore, but that was some tasty bird.

Awesome build! I love a good smoker. Just FYI: Wrapping the brisket also helps overcome "The Stall" which is when the temp of the meat gets up to a certain point then stalls out or plateaus. This happens because the evaporation of the moisture coming out of the meat is able to cool the meat as fast as it is being heated by the smoke. Effectively the meat is being cooled in the same way that our bodies cool down by sweating. Wrapping prevents this evaporation allowing the meat to come up to the needed temperature without drying out. Great video!

This is literally an Off set smoker!!! Very cool! Little to now radiant heat! Not that a footprint is a big deal but I really like the small foot print. What of you would have put vents on both sides? More even temps? Assuming they are not even?

Holidays with smoked meat? You haven't lived till you have had a smoked turkey for Thanksgiving or Christmas. Summertime...is just a damn good excuse to smoke meat for a big ass party.You could do ribs and meatloaf and dinosaur eggs (hardboiled eggs wrapped with spiced ground beef and smoke\cooked) ABT's (atomic buffalo terds aka cream cheese stuffed jalapeno's with a sprinkle of rub on top) just slice the jalapeno's in half and scoop out the seeds. Anytime is smoke time man. Love the smoker, awesome build. That is a great plasma table, gotta get me one of those.

Great project and great team work getting it all together to include the smoked briskets! I finally got around to a life goal of smoking Texas style brisket recently and Pat's steps/techniques are pretty close to my own! Great job Pat! Man, it takes some time to smoke a brisket...but the results are really worth it! Guess I'll have to fabricate a better smoker that holds the heat better than my off-the-shelf vertical smoker! Thanks for sharing and enjoy! You're one hard working guy! Best to the family! :)

Everything looks really cool but I think you need to put a grease drain some sort of plate at the bottom at the angle leading to an outside drain into a coffee can or something other than that everything looks pretty sharp. Thanks for the great KZbin content. 🇺🇸

I use brown paper grocery sacks instead of butchers paper. Looks really good. That’s a really cool smoker. Would like to see a tall insulated version using fire bricks or something similar.
