In today’s episode of Figuring Out, we have Krish Ashok in conversation with Raj Shamani. He is the Author of Masala Lab: The Science of Indian Cooking Science Communicator. Through content creation, he educates people on Instagram about food and the science behind it and has more than 800k followers there.
In this episode, we talked about why countries that have inequality have better quality of food, how Indian food nutrition is different from the US, and what Blue Zones are. He also shared how single women live longer than married ones and other interesting facts. We discussed how healthy refrigerated foods are, whether microwaves are better than stoves, and are non-stick utensils safe to use. He broke down some popular myths around superfoods, haldi, palak and more. We also discussed the importance of spices, detox drinks and why North Indians drink a lot of milk.
Towards the end, we talked about why India is becoming a lactose-intolerant country and how healthy is eating insects which is practiced in a lot of Asian countries like Thailand and Vietnam. My mother in law told me to cook fresh breakfast, lunch, and snack fresh everyday while I was recovering from pregnancy and raising a baby. She refused to use refrigerator and microwave. I was stressing physically and mentally. I couldn’t even spend quality time with my baby. I couldn’t sleep at night because baby used to wake up, I had to wake up in the morning to help her make fresh breakfast for everyone, feed my baby, cook again, feed baby, cook again, feed my baby and cook rice again at night. Because rice cooked few hours ago is not fresh enough to eat again. I still cry even today thinking about her treatment. I didn’t even mention all the other household jobs.

Learn to say NO. I m also a recovering mother of 2 month ,so i know how we feel tierd. Request your mother inlaw to cook. Mat socho ki vo kya sochegi , vo bhi nhi soch rahi hai tumhari condition jitna help le sakti ho lo .or agr vo phusically unfit hai help k liy to fir jaisa tumhe suitabl lgta hai waise hi cook karo ..please stop thinking about peopl , no one cares . Agr possibl hai to 3 time ka cook lagwa lo. Otherwise apni marji se karo jab so k uthna ho tb utho jb khud bhukh lage tab khana banao. Bolne do jisko jo bolna hai .

I am sure the guest has plenty of good things to say and without taking anything away from him. Here is my take - There are pros and cons to every kind of ingredient , food , preparation style. Do what feels right for you based on your personal circumstances. No one has the right to judge how you eat your food, live your life.. As for me - I have been on microwave food, outside food , home cooked , junk, healthy all sorts. Ultimately came down to a question of how much. Everything in moderation was good and I was healthy. Everything in excess affected my health….So, I learnt my lesson. As a side note, listen to your body. It will give you signals when something is right or not right.

My grandparents lived for 99 and 94 yrs. What I learned, exercise, discipline, eat in moderation and don’t take medication for every problem, analyze it and find alternate ways of solving it by good lifestyle. Happy a positive mindset and also everyone has to eat what their body tells them and local diet is the best as it’s according to your climatic conditions

I am in college I cook my own food. Man it takes so much time, thinking and planning. That too while managing studies. I was not a feminist. But after I started cooking, cleaning etc I became one. Feminist in the true equality sense.

This is good. I suggest you meal prep for 2-3 days. It's easier and cooking food in large batches will make it easier and cheaper.

I live in Portugal, the country follows a Mediterranean diet and you would see so many people above the age of 80 or 90 walking every day to have a coffee and talk with their friends. They are really an inspiration. I think an individual should not only be financially independent but also healthily independent in their old age.

Time+Labour of pre cooking, and cooking + post cooking + all electricity and gas or gasoline etc. And cleaning pots and pans, all prices are not calculated in home cooking.

Oveall home cooking settle at very cheap price... For family of 4 people, dinner costs around ₹1000 at good resturant. At resturants u dont know quality of food, what they are adding, posing health risk. When u cook at home the cost reduces significantly to ₹250-300 & every thing is 100% healthy

Fresh food feels better in the gut and digests better than stored food in the fridge. Source : my experience for last more than 10 years with bodybuilding and nutrition. Sources have shown constantly that stored food changes its chemicals properties, Hydrocarbon structures basically, although I gained a lot of muscles and strength with these foods leading to the fact there is not significant damage to the nutrients. The only thing I felt it fresh food feels better in gut than refrigerated foods.

This is such a pointless statement to make. Leftovers don't magically appear in the fridge. They were freshly prepared food once. What is being said is that leftover is better than outside food, but not better than fresh food. You are lucky if you are privileged to get fresh food cooked everyday and can afford to throw away leftovers, but for working mothers like me, I need to keep some leftovers in the fridge to feed my family if I end up coming home late from work one day. And don't ask me to quit my job. I don't have the privileges you do. What is discussed here is Fresh food > Leftover food > Outside food

Haan don't listen to him. Listen to doctors and scientists who are known to have perfect oratory skills. The doctors never misbehave, they are always respectful. The scientific research papers are written in such easy language that even a two-year old kid can read them. /s The thing is public outreach is hard. The only problem you may find is if he is not directly referring to scientific papers while making statements. So is it that difficult to listen to someone who has read and compiled all the resources for you? Do you have to call them a know-it-all?

What !!!rice prepping does take less time but what about the curry, rasam/daal, the chutney, all the variety of powders, the fav idly or dosa etc etc made in south. Nowadays for everything we have machines but in those days stone grinders were used. I didn’t like the comment that rice preparing women has less work 🤷‍♀️. Cooking is cooking. South or north , they have their own varieties of dishes and their own process. Please don’t bring your own perceptions and try influencing other with that 🫢

This one was so bad I had to stop midway and drop. Look how he toned down quickly and changed words as raj challenged him on some stuff. In india most people cant think critically and hence believe anything said with confidence on podcast or on whatapp messages. In few years there will be a law that will make also make hosts also accountable and they might haVe to take down such videos.

He forgot 100 years old meal in South Indian had very less chances of eating rice...they consumed millets like ragi..jovar etc with high protein.. South started to increase rice consumption after green revolution

Bro Kerala sadhya is perfect modulation of fiber protein and carbohydrates 8-9 different dishes and small area for rice in a banana leaf But the problem with it is it was only limited to kings for a period of time then to the minority of uper caste So normal people never got the benifit

Green Revolution had its use but cannot be glorified n made a way of life so it killed all out natural agricultural rhythms and poisoned our fields n water-bodies n food n livestock. We were in a rut so we needed to get out of it through the Green Revolution, MS Swaminathan appologised finally late in the day. It's like putting our fields on permanant steroids. Made to over produce n never encouraged to come back to wiser older indegenous ways. We had food shortage not because of lack of technology but due to external n internal colonisers.

I live in US and a South Indian , I keep salads for 3 days , without dressings make food for a week !! Microwave light energy is used to heat food but have to cover the food ! Dude we save time !!!

Sir, my husband suffered cancer. Tata, oncologist of Singapore and USA basically NewYork all said strictly not to use microwave. Explanation they have given doesn't match yours. It's not about changing DNA structure and thereby making cancer a genetic disease. Cancer is a metabolic disease. So fast cooking activate germs already present in food stuffs but do not destroy them. Cancer is a genetic disease, to my knowledge scientists never confirmed that nor my husband's treating oncologist in India and abroad. That was only at a suggestive state. Experiments were on in that direction. But now it is established that cancer is a metabolic disease. The problem is everyone wants to draw limelight towards them by saying something that sets him apart. Something is getting boiled or cooked in mico-wave in such speed, that is detrimental. I mean urge of letting know how much we know and how my knowledge is quite opposite the stream is spreading like cancer. Everyone has something to say on health and pole apart. Why don't you people meet and decide among yourselves after a seven days conference and present us with one narrative that is truly holistic. Also people who drink haldi water, they mix a pinch. Just a pinch if advised by doctors and not from n number of podcast interviews of KZbin channels. Your dress code also to an extent reinforce your credibility. I am not saying that you chose to look and dress in a certain way to make you more credible. But people who feels Google and KZbin is enough for guidance and scientific journals or books are off the chart, that section takes into consideration the dress code too

As a molecular biologist, one thing I would definitely like to point out is that there are many causes of cancer. While metabolic reprogramming may be one of them, there is no denying that most cancers are caused by mutations and damages induced in the DNA(genes). So to say that Cancer is just a metabolic disease, and not genetic is wrong.

superb podcast. before marriage i was soooo happy to get served food by mom and concentrate on my career. After marriage, cooking, cleaning takes the soul out of me, cant properly concentrate on my career and have a peace of mind, even after having a maid. Thinking of keeping a maid for cooking. I can soo resonate with this podcast.

Don't overthink. The stress hormones produced by fear , anxiety is much more dangerous than the one GMO tomato you have consumed. I just stick to commonsense eating. Balanced diet , reduced portion sizes, try to reduce ultra processed food (no aversion though) etc is easy for me than worrying about whether microwave causes cancer , refrigerated food has 2% less nutrients , mango has carbide in it etc.

I once got food poisoning due to Having food from the refrigerator. My mother in law was very stubborn about eating food prepared at night , the next day Sometimes she would continue the same amount of cooked vegetables at night also. My father in law was also admitted due to the same reason after a year for the same reason. I think keeping food in the Deep Freezing area might be the solution , but keeping food in the normal refrigerator area might not be a good idea. @Raj - the ghee you are talking about for detox, is not actually for detoxification. It's not normal ghee, it's prepared with ayurvedic herbs and the process is called Vaman. To understand Its benefits you should invite an ayurvedic doctor for your podcast or watch vaidya Suvinay Damle KZbin videos .
