Im Indonesian. My grandma always wakes up 3 in the mornings to make appam cook it with char coals and sell it to village shops. She saves some for breakfast. By far the best appam I've ever tasted.

He explains the exact science behind the appam , which is very eye opening and important to some o us , to understand why we do whatever we need to do. Our grandmas, mothers and fathers used to tell us "you need do it this way, not that way" but never the reason behind the action, so we understand further. But Varun Inamdar's explanation goes up and beyond, from the recipe to the tools we need to use. This is so important! and many chefs don't do this enuf.

Only just discovered you Varun. Love your authenticity and style. Esp the bit about the role of 'kappi' in the overnight method.... where I have memories of raw rice being soaked for hours and then ground before the toddy was added.

Two quick questions - can we just double the quantities to make more apoms for a big group? Does it affect taste or texture ? 2) it is important after pouring into chatti for batter to cook a bit first otherwise it will all slip while swirling round the pan?
