Love this recipe so much! Have made it for years and it never gets old. My family loves it. I will give you a “hack” for the noodles. Open package of noodles just a tiny bit to let the air out, then holding the open part (so it doesn’t go everywhere) and smack the noodle package with a large spoon or small rolling pin. It breaks them up into the perfect size to toss in the butter and toast along with the nuts, etc. Just a easy less messy way to break them apart. Thanks for posting this.

One of our family favorites. Toasting the noodles, sunflower seeds and almonds is new. Also our recipe uses the same 2 pkgs Ramen noodles chicken and the enclosed seasons. The dressing is make with the 1/2 cup oil, 1/3 cup vinegar, 1/2 cup sugar and soup seasoning packets of seasoning. It’s delicious. I’ll have to try the toasting. Thanks

AT LAST!! I have been looking for this recipe forever! A man I worked with brought some in to share at work. I loved it. He gave me the recipe but I left it at work when my hubby got sick and I had to work from home to care for him. Then 25 +yrs later I had someone ask him about the recipe and he said he didn't remember the dish..lol! So I will share yours back to him 😀. Funny how things play out. Thanks!

Hi Catherine! I love this dish! I always make it during the summer, tho the dressing I make is slightly different. (Same basic idea tho.). Although my recipe does call for toasting slivers almonds and sesame seeds, I've never toasted the noodles. I bet that would add another layer of yumminess! We sure love this recipe!

Always better the next day to me I make it a little different 1/2 cup sugar 1/2 cup oil and 1/3 cup vinegar with the seasoning packets in it , but my recipe is from 30 years ago I didn’t toast the noodles or the nuts but definitely going to try your recipe for sure ! It looks amazing !

Catherine, I’ve got this recipe and have made it several times. I love the idea of adding chicken and toasting the noodles. We always have leftovers so I sprinkle the noodles when I serve it don’t like when the noodles get soggy!

My recipe for this delicious salad is very close to Catherine's. One time I took it to a church 2nd Sunday potluck. Wouldn't you know there were two other ramen salads there. I took a bit of each for a taste test. Mine was the best! (Seriously, it was.) So congratulations Miss Catherine. 🙂

I have a suggestion for breaking the noodles up without them flying all over. I just broke mine up in the package and was able to get most of the chunks broken as well. It was so much neater. 😀

I've made ramen salad for years but I never thought to toast the noodles and nuts. I'm gonna try it ! I also use the flavor packet in the dressing, just mix it with oil, fresh lemon juice and some sugar. It's delicious.

I had to laugh when you said coleslaw! It’s exactly the way my husband and I say it, but then he was born and raised in Texas. When we moved from Texas to Pennsylvania, we got the strangest looks followed by a polite “pardon me?” every time we would order coleslaw from a restaurant! 🤣 The recipe looks delicious! I always used sesame seeds and slivered almonds, but sunflower seeds could work too. Asians typically don’t use dairy, so a more authentic toasting oil might be peanut oil or vegetable oil instead of butter. We like to sprinkle a bit of cayenne at the end.

I love these kinds of salads, the crunch and the flavors in the dressing but I’m wondering about adding the chicken to the dressing first. I love saucy chicken and sometimes the chicken can be dry, not saying yours is! Would there still be enough dressing for the slaw and other ingredients if I did that?

Ha! The lady who gave me the recipe for this, ages ago, mistakenly printed 1/2 teaspoon of oil instead of 1/2 cup, for the dressing. I dutifully followed the recipe and it was the dryest thing you ever saw. People kept going for mayonnaise to dress it. But once I figured it was a 1/2 CUP of oil, it became a favorite.
