Anchovies are very common in bbq sauce. They're a good salt replacement since they're salty, and the accentuate the worcestershire sauce since it too has Anchovies in it.

I just moved down to Alabama from the North (NY, specifically). I have been at Golden Rule, and LOVED LOVED LOVED their sauce!!! As an intro to Alabama sauce, it was a great intro!!!!

If you include a dash of Worcestershire in your barbecue sauce, as you must, then anchovies are an ingredient in your sauce.

I'm not sure if y'all have it in Alabama but it's called Lily's. No high fructose corn syrup, no added sugar, non GMO, no artificial colors or flavors and they make regional sauces as do most companies but the Alabama Ivory sauce is my go-to on just about everything not just chicken. It's fantastic! HIGHLY RECOMMEND

There's a small bbq joint in Clay, AL, that has what I think is the BEST sauce (& meats). If you're ever in the Trussville area, drive down Old Springville Rd to BBQ Stop & try the Southern Peach sauce. Delicious. Their other sauces are quite good, too, but I am hooked on the Southern Peach. Saw a comment regarding Saws. I do love Saws bbq, but I think their red sauce is a bit thin. That said, their pork-n-greens are PERFECTION. Their white sauce is wonderful, as well.

Grew up in Bessemer and Bob Sykes was a favorite, it's one of the few things I miss since I moved away in 2018. That and Domino's Pizza in Mountatin Brook.

I'm from the coast of South Carolina so we r Vinegar based. We went to Tuscaloosa numerous times when we played Bama and over to Starkvegas MS to play Miss State. Have eaten at the original in Jerusalem Heights at least 10 times and there is nothing tomato based better than Dreamland. After eating there going to Starksville MS once, the taste is so good, when I had a good burp, you could taste the sauce again. So dang good. Always get 5 jars b4 leaving.

Never had any of these but lived in LA (lower Alabama in Selma, the arm pit of the south) and the best I ever had is Hancock’s followed closely by Lannie’s. Hancock’s Camp Stew, his version of Brunswick Stew with a BBQ sauce kick, is ‘jump up and slap yo Grandma good’.

Yeah, Dreamland sauce is definitely the best. Now, as for their ribs, had better all over the state. Even right in Tuscaloosa, Archibald's is better. Dreamland's ribs have taken a step back since "Big Daddy" passed on to that bbq pit in the sky.

I'm thinking you might want to try your test a little differently, although it would have taken a little longer. It looks like you are just trying the sauce out of the bottle, which isn't necessarily quite right. Whenever I have had pulled pork it's after someone has done all the work to make it that way, sauce and all, served hot. You needed your meemaw's to show up and cook up a bunch of pulled pork, keeping it hot, in each type of sauce. They would then hand you a sandwich cut into quarters, from which in each case you would eat a quarter. You could then also try some out of the bottle on the bread as you demonstrate for us. That would be the cold version. Sure, that would cost more and take longer, but for folks like me, it would give me a better idea of what it is you're looking at. Additionally, you could actually make a party out of it...

There are three sauces in our fridge right now Sonny's honey cause it's sweet, thick, and we use it for a dipping sauce mostly Joe Kim out of Moultrie, GA....this sauce is our jam but we have to cross the state-line to get it And of course Gibson. We started using this since "the plague" hindered us from getting home. All different sauces but all delicious 😋. I'm gonna try Dreamland though. Thanks bunches 👏👍

If you combine 50% FullMoon with 30% Jim n Nicks, 10% Golden Rule, 5% Kroger whole grain garlic mustard, and 5% of honey Jack Daniels, then mix together in a double boiler and put it on the stove until it comes to a boil, you’ll have the best “homemade” bbq sauce ever.

There used to be a truck stop/bbq place in Centreville called Twix’n Tween. This is supposedly their sauce recipe-very old recipe from Bibb County. 2c. ketchup 1c. dill pickle juice 3/4c. mustard 3T. sugar pinch garlic salt 1t. salt 1t. lemon juice 3T. hot sauce 1t. paprika 2t. Worcestershire sauce Mix well, let come to a boil. Take off stove and cool. Use with pork or beef. I guess I’m not a real Bama sauce guy, because I like Country’s the best. I order their sauce by the case. Y’all just take me out yonder and shoot me.

Dreamland bbq sauce has been my favorite all throughout my life. It is my go to sauce for ribs and I have yet to find something that is better (keep in mind I like my bbq sauce spicy and thin and not sweet or thick).

Agree with your sauce pick, but disagree with who think has best ribs in Alabama. In Alabama Archibald's, Dreamland and a few others, then maybe Rodney. I did try there ribs, but as you probably know he has partnered with Pihakis Restaurant Group. You know the Jim and Nicks BBQ sauce that you said tasted like a chain restaurant. Just my opinion!

I know this is Alabama sauces on an Alabama page and let me say I love y'all Alabama, but here in Texas, it's BEEF bbq and good beef bbq don't need no sauce at all. I'm looking to try some of y'alls white sauce the next time I'm down y'alls way!

I have Texas BBQ on my bucket list. I would also agree beef doesn't need any sauce. As far as white sauce in Alabama this is misconception. Probably because this was developed by North Alabama BBQ restaurant. Alabama is clearly famous for its red BBQ sauces. You may have a few that offer white sauce, but 99 % of Alabama use Tangy, Spicy vinegar based red sauce. So don’t believe these so called food experts on the internet. They just copy and paste from one site to the other. I was really surprised how many so called experts that have white sauce as Alabama's preferred sauce.

As a person who lives in Western NC, I am legally obligated to say that beef is not barbecue. Only pork can be considered true barbecue, as the root word of barbecue, barbacoa, refers specifically to pork. That said…I would love to try Texas BBQ/BBQ-style brisket someday. Unfortunately, we don’t have a smoker at home, and I can’t eat grocery store/restaurant beef because it gives me a pounding headache. I get my beef from a local farm, and I can have a professionally cooked steak at one restaurant, because they get their beef from the same farm. Anything else with beef that I eat has to be homemade. On the other hand, maybe if I ever go to Texas, I can bring a brisket with me (frozen), or otherwise source one from a local farmer to try it.

Matt is correct: Religion, Football, and Dreamland are VERY touchy subjects in Alabama. For me... 1) Religion: Taoism (Like Buddhism, only we laugh more and like meat). 2) Football: Samford Bulldogs (It's my alma matar). 3) Dreamland: Hate it (Their smoked pork is weak. Sauce is just okay). So...yeah, I'm not a normal Alabamian. 😢

BBQ in the South. Pulled pork or in some cases chicken, cooked very slowly. Either over an open but low flame or a smoking process. BBQ in the North. Some guy named Al, cooking a hamburger outside.

KC here, I don't like Gates Sauce by itself but with the meat it makes sense, and saying something ify about Gates will get you put in time out in many corners of KC. TLDR, I agree with no meat taste test and not.

This one was a red sauce challenge because there are so many different red sauces from so many classic Alabama bbq restaurants to try. And red sauces are more traditionally used for pulled pork. We'll get white sauce in a different ranking later hopefully.
