In the book, when Akane steps in to stop Ranma's attack, she actually slaps him, though not from annoyance like usual, she was honestly just trying to help Shinnosuke since he's handicapped. She even gives him the opening to hit her back, but what's done is done. In Ranma's mind he, and I quote, "Got dumped", and the hit sealed it.
