The Viña Tondonia rec you made in April of 2020, became my favorite. It bats out of it's league and that part of Rioja is simply stunning. Pair it with a Chuleton from any of the steakhouses in the nearby mountains and it's a transformational experience. As someone who used to live in SF, Rioja is a hidden gem and luckily not overrun yet with the trolly and bachelorette parties that you have in Napa or Sonoma.

I'm not a white wine drinker. My "go to" reds would be Nebbiolo (Piedmonte), or next level would be Barolo, also from Piedmonte, Ripasso di Valpolicella, or an Amarone (Veneto).

The sous vide for the steak is a brilliant way to make it! A suggestion if you want the ultimate sear: use a tiger torch hooked up to a propane tank. The level of sear is unmatched to any other finishing method. Plus, when guests are over, it turns searing the steak into a bit of an event, especially for the men. It's incredibly fun, and the end result is wonderfully delicious. 🥂

My three coup de coeur Pavie 2001, Leoville Poyferre 1990, Batard-Montrachet Domaine Leflaive 1992. Pavie 2001 first intense, very rich, very close st Emilion garage wine from the 90's, a runner up for competition but what a fabulous final very sweet like great Margaux finish. Drink 18 bottes so far last 2015 Evangile 2001 is his little brother for less than half the price. Poyferre 1990 Perfect, better than many Parker 100/100, my hairs stand up on the skin every time. Best of the best Drink 3 bottes last 2015 Batard leflaive 1992 Perfect mixted between complexity and simplicity. Simply amazing... Better than 80 % of Montrachet Grand Cru Drink 10 btlles last 2008
