So stoked to see the Smoky Quartz Bourbon finally make it on here to the Vault! I’ve had a couple bottles of their bourbon before over the last few years, and I have one of their home aging kits! I also personally know one of the owners, but them being in NH and myself down here in OK kinda puts a damper on having regular consistent access to it.

16:45 - Fancy Dan - Grape Brandy has to be aged for 2 years as well in the US, not just a cognac rule. Fruit brandy doesn't have a rule per TTB and apple and durian fall into that category.

Daniel, it seems you would like the meaning of "craft" to be the first usage of the word as defined: "an occupation or trade requiring manual dexterity or artistic skill" But the other meaning of "craft" is "skill in deceiving to gain an end". So when a bottle uses the word "craft" to help sell the whiskey, they are truly being "crafty" and the use of the term is still valid on the label.

Random fact: deer hunters will also use buckwheat as a cover crop to hold moisture in the ground and will smash the plants down it dries turns into a straw type of mulch for the other plants you’re trying to grow like clover, turnips etc to a good size before deer or birds kill it off before it gets the chance to grow

The requirement for brandy in the US is two years of aging. In the EU, it can be as little as six months. There are stricter requirements for some, such as Cognac and Armagnac.

From Smoky Quartz: I'm psyched to make a bourbon that people enjoy. The 100% corn mash was a bit controversial at first but its been very well received and has developed a great following. Kevin- I live up here in Concord, NH and recently grabbed a bottle of this Smokey Quartz V5. I am so pleasantly surprised. It has a complexity to it that I was not anticipating given the amount of time it spent in the barrel. I will be purchasing another bottle as soon as the one I have has expired. Very well done my friend. So cool to see someone making a wonderful bourbon in our great state. Cheers!

Brandy industry probably has the most strict regulations too. If it’s not coming out of France, you can’t legally mass produce brandy/cognac. At least with Whiskey, it can be produced anywhere in the world with some varieties having restrictions on where they’re produced to legally call them something like a Bourbon, Scotch, etc

A shot of Maker's 46 with the 2 quick squirts of liquid stevia and equal parts bourbon to seltzer, and the residual almond extract(optional) left on a teaspoon, mixed. I, as a newish found whiskey lover, yes even though I mix stuff in it, am finding that I like to keep the additives simple. THE ALMOND EXTRACT IS JUST A RECENT EXPERIMENT to add a note more of "cherry"; HOWEVER, I am trying to make a near 'neat' mix(I know neat and mix is hypocritical, spare me) minus what I don't like about ANY alcohol. Which is the burn, even in the slightest, and the bitter feel in my mouth I don't like. So..I have been adding stevia to for one bring out those sweet tastes and notes a little more on the pallet, but 2, stevia has a slightly salty mouth feel. So I figured, salty flavors will neutralize something bitter, the alcohol is bitter, add the stevia and it goes away MORE SO than when straight. Then I suppose the seltzer just hones in the smoothness I desire but no flavors(unless I'm experimenting). I REALLY DO like the flavors I get from bourbon/whiskey etc, I just DO NOT like the burn, so I think there can be made drinks that maintain the integrity of FLAVOR, but maybe cuts you a break on the burn for those who may not like that aspect of it...anyone?

South Africa requires brandy to be aged minimum 3 years, otherwise it is called Witblits if distilled from grapes, or mampoer if distilled from any other fruit

Sunlight can change the color and flavor, you should avoid it as best as possible. It will oxidize it
