Good to see you. I wondered what happened to you. You turned me into a crazy person--crazier person--after watching your video on making paneer. Ever since, I've been reducing things. Yesterday, I reduced heavy cream by cooking it slowly and frequently skimming off the foam. What I skimmed off was actually delicious, so I made more. Now I have all this thick cream in the fridge, and I don't know how to use it. I blame you. Not really, but you are too inspiring, maybe. If I had a pressure cooker, I would make this. It looks awesome. You have such a bright and beautiful kitchen.
