My husband is from England and always wants a Trifle. I have seen many ways of making it, but he wants the jello /jelly in it told me to dump it in on the sponge liquid. I wasn't a fan of doing it that way. Thank you for showing not only how to make it but how you make the sponge with jelly. This is fabulous Stacey. The skin on the top of the custard is my favourite part. Love Pavlova with fresh cream and lemon curd, mango or strawberries. I have made pavlova in a lined springform pan that has a divider in it it breaks it into four parts which is enough for two servings leave the liner on it and between the pieces stick it in a cardboard cake box and freeze it last a month in there for me top it with cream and whatever fruit I want straight from freezer great in summer. Learned this from a pub I worked in that brought in bulk same with cheesecake. When cooking for just myself I saw the tin that had the divider and got it so I could make a basic cake mix and make four flavours come it. The bit that’s stuck on your paper is what I call the cooks taste test.

I think everone has their own version of trifle and I've changed my recipe many times over the years. Love your version with lots of custard and cream. I put a layer of raspberry blancmange with fresh raspberries mixed in between the custard and cream, and top with roasted chopped nuts.

For jelly, I use 50% boiling water, dissolve crystals, then fill a cup with ice cubes top up with water, add and stir until ice cubes dissolve for a faster set. To cool the custard, or anything else, put the pot on something like a wooden spoon so the pot is at an angle and water gets underneath to cool the bottom of the pot too, it's a bit quicker.

Party pooper!! I used to love taking off the skin & eating it as it is the best part of the custard!! 🤩 My recipe came from the Woman's Weekly exerts they used to put in the magazine in the 1960s when it was worth the money to buy it. I always used port wine jelly crystals & used to use two packs of crystals to one cup of boiling water & then one cup of cold water as this made a stronger jelly to cut up & spread over my trifle. We traditionally used sliced peaches in the trifle & some sherry was added to the juice & then I also made up macaroons as well as the custard & cream for the topping. It was a custard made with custard powder but they added the two egg yolks to it from the pavlova whites which made it nicer. So the layers were jam sponge cake on the bottom & around the side with a layer of peaches, a layer of small macaroons, then pour the juice over the top, put on the custard followed by the cream with sliced peaches or strawberries on top with chocolate flake sprinkled over the top. It made up a huge bowl, so I used my punch bowl for it each Christmas. In later years I just skipped the macaroons or bought a pack of the biscotti biscuits & so the only thing I actually still made up was the jelly & whipped the cream. the rest was all bought using Foster Clarke's long life custard as it is creamier & thicker. I prepared it on Christmas eve & left it overnight in the fridge to take on the flavours. it was very popular with the family. Now my granddaughter has taken over the job & so we have her version these days. I like the idea of the lemon curd or as we Aussies call it, Lemon butter. My family loved lemon meringue pie, only I can't make pie crusts that are edible, so I should have been making them as a palaver!! I used to buy the pie crust once they came on the market, before that you just scraped the topping out of the crust!! I had a couple of jars of lemon curd recently but they didn't last long as they were homemade & tasted so nice I just ended up eating them with a spoon & then had a sugar reaction to contend with!! This reminds me; I also bought a bottle of marmalade as well but upon opening it, it isn't cooked properly & so was starting to mold. I have it in the fridge but could I actually pop it on the stove & cook it a bit longer to get it to thicken & set?? The fruit definitely wasn't cooked long enough. So it was made by an amateur!

I love your trifle bowl - I’ll be keeping an eye out for something similar. I don’t use jelly in my trifle. I know it’s quite traditional but it does nothing for me so I just add extra fruit instead. And I admit I’ve never made my own sponge, either, but just sandwich a bought one with jam (black cherry’s always a favourite, goes with most things.) Yours looked yummy. Now I’m going to have to make one for Christmas as I won’t be able to stop thinking about it otherwise!

Yum, yum, yum. LOVE Pav. LOATHE the supermarket wet marshmallow things they pass of as Pav nowadays. Yours looks perfect as does the trifle. Another lovely, tasty and easy thing to make is, fill some wee shortcrust tart shells (homemade or store bought) with lemon curd, slice some strawberries into fans and splay them on top and dust with icing sugar. UNBELIEVABLY GOOD. BTW, if you want a very decadent way to use up those egg yolks you could make Vov AKA Zabaglione. It's an unbelievably good ltalian liqueur made from Marsala (a type of wine) and egg yolks. La Cucina Italiana has a great recipe (in English) called Vov: The Easy Recipe for Zabaglione Liqueur. I know KZbin removes links so I'll post it separately.

Hello Stacy, I have made your chicken roll, well 2 rolls actually and I have turned them into Turduckins. I had bought a turkey breast and a couple of duck breast’s. I covered the bacon with thinly sliced turkey and minced the duck in with the chicken. The streaky bacon I had bought was not really very long, but I got the first roll made with it. As I was unable to get more streaky locally, I used middle bacon for the second roll. They have been in the fridge overnight. I’m going to cook them both today, but I was wondering if I could freeze 1 after cooking and cooling it? I love your new series of 12 days of Christmas and will be watching them on the ship to NZ.
