Thanks for all your hard work Dave! I don't know if you did, but I would have pulled those water distribution pieces up top to check and see if they had debris in them. A popsicle stick or tip of pen is the perfect thickness for adjusting ice thickness probe, the slightly thicker bridge actually harvests easier than 1/8 inch. A cold room wreaks havoc on harvest, you can go into water settings to increase ice clarity, i.e. use more water, that will build more heat for harvest. That unit was screaming slightly low on charge, you can charge 20% of factory charge to aid harvest and if the machine isn't low on charge the extra 20% will be just fine. If the machine is older than 2019 you can download the latest firmware from Manitowoc on a USB drive to increase harvest from 3.5 min to 7 min to get that sheet off without throwing long harvest safety limit. Crazy how much time some ice machines take to fix and test . My last job my Boss would never give me an enough time from job to job . I liked working them but that was a big problem so I went into a different field

That is the biggest problem in commercial refrigeration. Techs should be dispatched to one job until figured out. Look at VRV calls thousands of dollars in labor to diagnose then more for repair no questions asked
